地域文化视角下的餐饮空间设计研究

【摘要】：随着社会时代的发展和人们生活水平的提高,人们对于餐饮空间的就餐环境品质越来越重视。餐饮空间的设计成为一个地区展示其地域文化、民俗风情和生活品质的重要窗口。因此,餐饮空间的地域文化性设计也成为一种发展趋势。文章以江南地域文化为背景,餐饮空间为研究对象,探讨如何通过一些江南元素的运用和设计手法的表现,将江南地域特色融入到餐饮空间的设计当中,营造富含江南地域文化的餐饮空间。本文首先介绍了研究的背景,目的与意义以及研究内容与方法。第二部分从地域范围到历史沿革,从江南园林到江南建筑再到其思想内涵,详细剖析了江南的地域文化。第三部分阐述了江南地域文化视角下餐饮空间设计的发展历程,现状以及餐饮空间建设与江南城市发展的效应。第四部分总体论述了江南地域文化在餐饮空间设计中的应用原则和表现手法。第五部分提取了江南地域文化设计的要素,辅以案例说明,阐述如何借鉴江南传统居室的家具陈设和江南园林造园手法,营造带有江南地域特征的餐饮空间。本文的创新点在于以中国文化为大背景,在充分剖析江南地域文化的基础上,化抽象为具象,用一种更为直观和细化的思路来研究餐饮空间的地域性设计。以点带面,对餐饮空间的地域性的研究发展和特色化空间环境的营造有深远的影响。
[Abstract]:With the development of the social era and the improvement of people's living standard, people pay more and more attention to the dining environment quality of the dining space. The design of the dining space becomes a region to display its regional culture. Therefore, the regional cultural design of food and beverage space has become a trend of development. This article takes the Jiangnan regional culture as the background, the dining space as the research object, discusses how to integrate the Jiangnan regional characteristic into the dining space design through the use of some elements of Jiangnan and the expression of the design technique. This paper first introduces the background, purpose and significance of the study, as well as the research content and methods. The second part is from the regional scope to the historical evolution. From Jiangnan garden to Jiangnan architecture to its ideological connotation, this paper analyzes the regional culture of Jiangnan in detail. The third part expounds the development of catering space design from the perspective of Jiangnan regional culture. The present situation and the effect of food and beverage space construction and the development of Jiangnan city. Part 4th discusses the application principle and expression technique of Jiangnan regional culture in the design of dining space. Part 5th extracts the design of Jiangnan regional culture. The elements. With the illustration of case, this paper expounds how to draw lessons from the furniture furnishings of the traditional rooms in Jiangnan and the gardening techniques of the gardens in the south of the Yangtze River to create the dining space with the characteristics of the Jiangnan region. The innovation of this paper lies in taking the Chinese culture as the background, on the basis of fully analyzing the regional culture in the south of the Yangtze River, turning abstract into concrete. The regional design of dining space is studied with a more intuitive and detailed way of thinking, which has a profound influence on the regional research and development of catering space and the construction of special space environment.
