吉林省原料奶质量安全控制评价研究
[Abstract]:Dairy products quality and safety has been the focus of attention of the whole people. As the beginning of dairy supply chain, raw milk is the basic guarantee of dairy product quality and safety. In recent years, the development of dairy industry in Jilin Province has made remarkable achievements, but there is still a big gap in the development level of dairy industry in the developed provinces. Therefore, the development of milk industry in Jilin Province should proceed from the root, improve the quality and safety of raw milk in an all-round way, win the trust of consumers with high quality and good milk, and then promote the good and fast development of milk industry in Jilin Province. Based on the supply chain theory, the key control links affecting the quality and safety of dairy products are analyzed, and the evaluation system of the quality and safety of raw milk is constructed. Based on the analysis of the present situation of raw milk quality and safety control in Jilin Province, the key factors affecting the quality and safety of raw milk in Jilin Province are pointed out. Finally, the improvement measures are put forward according to the conclusion. Firstly, Kano theory is used to identify the key links that affect the quality and safety of dairy products, and it is pointed out that the production and circulation of raw milk are the two key links that affect the quality and safety of dairy products. On this basis, the quality and safety control evaluation system of raw milk was constructed, which laid a foundation for questionnaire investigation and field investigation. Secondly, the present situation of quality and safety control of raw milk in Jilin Province was comprehensively evaluated by questionnaire. BP neural network combined with MIV method was used to analyze the quality and safety control of raw milk in Jilin Province. The results showed that the quality and structure of forage feed, the level of dairy cattle breeding and the environment of dairy cattle breeding. The level of disease prevention and milking equipment hygiene are the key control factors affecting the quality and safety of raw milk in Jilin Province, and the corresponding improvement measures are put forward. Through vigorously developing alfalfa industry, optimizing forage structure in Jilin Province, strengthening the construction of breeding system of improved breeds of dairy cattle, optimizing the structure of dairy cattle varieties and improving the quality of raw milk; Standardizing the construction of dairy cattle breeding farm, optimizing the dairy breeding environment, providing guarantee for the quality and safety of raw milk, strictly standardizing the safe use of veterinary drugs, and perfecting the establishment of disease prevention system; Strengthen the cleaning and disinfection of milking equipment to ensure the quality and safety of raw milk.
