《内经》“五谷为养”思想的合理性膳食研究

【摘要】:目的:梳理人类膳食结构形成历程,通过对中医古籍及现代文献中所载“五谷”种类及食养相关理论进行探析,探究“五谷为养”膳食的中医学思想内涵;归纳五谷与营养代谢障碍性疾病的相互关系,为当代健康饮食提供参考。方法:本课题运用文献研究法和理论研究法,通过现代文献与古代书籍进行相互佐证。基于《黄帝内经》食养理论,交叉营养学、生理学等现代医学知识,探析“五谷为养”合理性膳食的思想内涵及实用价值。内容:梳理古今文献资料中进食五谷与人体健康的相关内容,深入探析《黄帝内经》“五谷为养”膳食的思想内涵,以特定营养素作用机理为切入口,证实五谷在饮食结构中的重要性,纠正不良饮食习惯,为合理性膳食及临床疾病调护提供参考依据。1、对比1982年到2012年间中国居民营养健康调查结果,分析我国居民饮食结构的发展趋势。根据古籍与文献记载,梳理人类膳食结构及“五谷”种类的演变历程。2、重点阐释“养”的内涵、“五谷为养”思想的理论基础及其实质、“五谷为养”膳食的功效及饮食五谷对疾病的干预作用,明确在“四时五脏阴阳”指导下的辨证施膳,提出合理膳食的构建要求。3、系统阐述五谷在人体内的代谢过程及其对人体的作用,并对存在的饮食误区进行机理探析;对比古今文献,探讨“五谷为养”膳食的合理性和普适性。结果:饮食五谷对人体的作用受四时、地域、体质、五行等多方面因素的影响,“五谷为养”是以脾胃运化为生理基础,以营卫理论为依据的一种膳食模式,其思想实质是将“养、助、益、充”视为一个整体,以“养”为核心,“谷、肉、果、菜”合理搭配。本研究发现当代人的饮食结构误区,以及探讨慢性营养代谢障碍性疾病成因,为居民健康饮食提供正确的指引方案,制定详细的五谷膳食规律谱,对临床疾病的调治有重要的指导意义。
[Abstract]:Objective: to analyze the history of the formation of human dietary structure and explore the traditional Chinese medicine (TCM) ancient books and modern literature on the category of "grain" and the relevant theories of feeding and nourishing, and to explore the connotation of traditional Chinese medicine (TCM) thought of "grain for nourishing" diet. The relationship between cereals and nutritional disorders is summarized to provide reference for modern healthy diet. Methods: literature research method and theory research method were used to prove each other through modern literature and ancient books. Based on the modern medical knowledge such as the theory of feeding and nourishing, cross-nutrition, physiology and so on, the ideological connotation and practical value of the rational diet of "grain for nourishment" are analyzed. Contents: combing the relevant contents of eating grain and human health in ancient and modern literature, deeply analyzing the ideological connotation of "grain for nourishing" diet in the "Yellow Emperor's Classic", taking the mechanism of specific nutrition as the entry point, To confirm the importance of grain in dietary structure, to correct bad eating habits, to provide reference basis for rational diet and nursing care of clinical diseases, and to compare the results of nutritional health survey of Chinese residents between 1982 and 2012. The development trend of the dietary structure of Chinese residents is analyzed. According to the ancient books and literature records, this paper combs the evolution course of human dietary structure and "grain", and explains the connotation of "raising", the theoretical basis and essence of the thought of "raising grain for raising". The effect of "grain for nourishing" diet and the intervention effect of diet grain on disease, and the differentiation of symptoms and signs of diet under the guidance of "04:00 Yin and Yang of the five Zang organs", The author puts forward the construction requirements of reasonable diet. 3, systematically expounds the metabolic process of grain in human body and its effect on human body, and probes into the mechanism of the existing dietary misunderstandings, compares the ancient and modern literature, This paper discusses the rationality and universality of "grain for nourishment" diet. Results: the effect of eating grain on human body was influenced by many factors, such as 04:00, region, physique, five elements and so on. "grain for nourishment" was a kind of dietary pattern based on the theory of operating the spleen and stomach as the physiological basis and the theory of Yingwei as the basis. The essence of its thought is to regard "raising, assisting, benefiting, filling" as a whole, with "nourishing" as the core, "grain, meat, fruit and vegetables" with reasonable collocation. In this study, we found the misunderstanding of diet structure of contemporary people, and discussed the causes of chronic nutritional and metabolic disorders, provided the correct guiding plan for healthy diet of residents, and worked out a detailed spectrum of the regular pattern of grain diet. It has important guiding significance for the treatment of clinical diseases.
