食用油供应链信息流风险综合评价研究

【摘要】:科学技术的不断进步和经济的不断发展,带来了全球化的信息网络和全球化的市场。供应链是现代物流的深入发展,是一种更先进,更综合的组织模式。横向一体化的供应链形成了一条从供应商到制造商再到分销商的贯穿所有企业的链条,各相邻节点企业是一种需求与供应的关系。供应链中的信息流是商品及交易信息的流程,方向是在供应商与顾客之间双向流动。信息不仅在帮助实现计划、生产和控制等管理功能中变得日益重要,在保障消费者的食用油质量安全上也很关键。与此同时,也伴随着信息流风险,主要由于信息延滞以及信息失真等原因造成。长期以来,中国食用油供应链的信息流一直存在着风险,一方面,对市场把握不准、全国范围工厂间调货、产品推广不理想、责任难以划分、横向协调较难,配送陷入被动操作等,这些都有待解决;另一方面,转基因食用油、地沟流等充斥着整个食用油市场,而消费者却不清楚真实情况,食品安全问题岌岌可危。本文以食用油的供应链信息流风险为研究对象,结合食品安全,在对食用油供应链信息流风险的国内外研究现状进行综述的基础上,分析介绍相应的概念内容。然后,通过问卷调查和资料整合等方式搜集相关数据,辨识食用油供应链信息流风险的关键影响因素:首先,利用DEMATEL方法对供应链信息流风险的影响因素予以定量分析,确定出影响因素的综合影响度、被影响度、原因度、中心度,从而有针对性的初步辨识监管可追溯信息技术支持、食用油信息的对称性、政府监督和控制管理可追溯等是关键因素。其次,根据上述所提炼的关键因素建立食用油供应链信息流风险的评价指标体系。接下来,首先对风险评价基本原理以及供应链中信息流建模理论进行了详细说明,并且构建了一套科学有效的食用油供应链信息流风险评价指标体系构建;然后诠释了可变模糊集合的一些原理以及风险评价模型构建方法以及步骤;最后以食用油生产企业A为实例,验证了基于可变模糊集的风险评价模型精确可靠。最后,对未来食用油供应链信息流风险需要进一步完善的地方提出展望。
[Abstract]:With the progress of science and technology and the development of economy, global information network and global market have been brought. Supply chain is the development of modern logistics, is a more advanced, more comprehensive organizational model. The horizontal integrated supply chain forms a chain running through all enterprises from supplier to manufacturer to distributor. Each adjacent node enterprise is a kind of relation between demand and supply. The information flow in the supply chain is the flow of goods and transaction information, and the direction is the two-way flow between suppliers and customers. Information is becoming more and more important not only in helping to realize management functions such as planning, production and control, but also in ensuring the quality and safety of edible oil for consumers. At the same time, it is accompanied by information flow risk, mainly due to information delay and information distortion. For a long time, there have been risks in the information flow of China's edible oil supply chain. On the one hand, it is difficult to grasp the market, transfer goods from factory to factory across the country, promote products unsatisfactorily, divide responsibility hard, and coordinate horizontally. On the other hand, GM cooking oil, gutter flow and so on are flooded with the whole edible oil market, but consumers do not know the real situation, food safety problems are at risk. This paper takes the supply chain information flow risk of edible oil as the research object, combining with food safety, on the basis of summarizing the domestic and foreign research status of edible oil supply chain information flow risk, analyzes and introduces the corresponding concept content. Then, by collecting relevant data through questionnaire and data integration, the key influencing factors of information flow risk in edible oil supply chain are identified. Firstly, quantitative analysis is made on the influencing factors of information flow risk in supply chain by using DEMATEL method. Determine the comprehensive degree of influence, the degree of cause, the degree of centrality of the influencing factors, so that the preliminary identification, supervision and supervision can be traced back to the information technology support, the symmetry of edible oil information, Government supervision and control can be traced back to the key factors. Secondly, the evaluation index system of information flow risk in edible oil supply chain is established according to the key factors. Then, the basic principle of risk assessment and information flow modeling theory in supply chain are explained in detail, and a set of scientific and effective index system of information flow risk evaluation in edible oil supply chain is constructed. Then some principles of the variable fuzzy set and the construction method and steps of the risk evaluation model are explained. Finally, the risk evaluation model based on the variable fuzzy set is proved to be accurate and reliable by taking the edible oil production enterprise A as an example. Finally, the future of edible oil supply chain information flow risk needs to be further improved.
