基于产品质量的食品生产线建设项目的质量管理研究

【摘要】:随着生活水平的提高,食品行业已经进入了量增利微的时代;企业在选择扩产以满足市场需求的同时,必需保证产品的质量安全。食品生产线建立过程中,普遍由于缺乏将生产线与产品质量要求以及食品安全体系三者之间良好的结合,生产线项目质量难以有效实施和保障,导致生产线建立的过程中质量目标不断调整、更改,甚至生产线投生过程中不断暴露出产品质量缺陷;因此构建一个合理的食品行业生产线建立的项目质量管理模式对企业具有重大意义。本文通过案例研究的方法,首先认识学习项目质量管理的知识和理论,分析识别企业在实施产品生产线建设项目过程中质量管理方面存在的不足和问题,根据项目质量理论中的方法寻找合适的方法和工具提出对策,文中采用的工具和方法主要有QFD(质量功能展开技术)、HACCP质量安全体系、SPC统计过程控制等;然后结合案例A公司食品添加剂干粉灌装线建立项目结合构建的项目质量管理构建模型进行实施,内容包括项目团建立、项目质量规划、项目质量保证、项目质量控制,确保建立有一条即保障生产线硬件质量要求又保证实现的产品质量的生产线;最后在项目实施研究过程中进行总结并找出不足之处提出展望。
[Abstract]:With the improvement of living standard, the food industry has entered the era of small volume increase and profit increase, while enterprises choose to expand production to meet the market demand, the quality and safety of products must be guaranteed at the same time. In the process of establishing food production line, due to the lack of a good combination of product line, product quality requirements and food safety system, it is difficult to effectively implement and guarantee the quality of production line project. Lead to the establishment of the production line in the process of continuous adjustment of quality objectives, change, and even the production line in the process of continuous exposure of product quality defects; Therefore, it is of great significance for enterprises to construct a reasonable project quality management model for food industry production line. In this paper, through the method of case study, we first understand the knowledge and theory of project quality management, and analyze and identify the shortcomings and problems of quality management in the implementation of product line construction project. According to the methods in the project quality theory, the author puts forward the countermeasures. The main tools and methods used in this paper are QFD (quality function unfurling technology) and QFD (quality and safety system) statistical process control. Then combined with the case A company food additive dry powder filling line establishment project combined with the construction of the project quality management construction model, including project group establishment, project quality planning, project quality assurance, project quality control, To ensure the establishment of a production line that not only guarantees the hardware quality of the production line, but also guarantees the product quality achieved; finally, it summarizes the research process of the project implementation and points out the shortcomings and puts forward the prospect.
