电子鼻结合气相色谱-质谱法对宁夏小尾寒羊肉中鸭肉掺假的快速检测

【摘要】:以宁夏小尾寒羊为研究对象,将熟化的鸭肉按照不同比例掺入到羊肉中制作成掺假肉样,利用电子鼻和气相色谱-质谱法对肉样进行快速检测。通过电子鼻对肉样挥发性成分的响应,利用Fisher线性判别分析,线性回归拟合分析等进行定性定量判别和模型的建立。同时利用固相微萃取结合气相色谱-质谱联用仪对样品进行检测。结果表明,Fisher线性判别分析能区分不同样品,线性回归拟合分析相关系数高达0.965,利用Fisher线性判别分析预测掺假正确率为98.2%。气相色谱-质谱法共检测到26种挥发性化合物,3-环庚烯-1-酮、3-甲基丁醛等被认为在区分不同样品中起重要作用。利用电子鼻和气相色谱-质谱法数据建立偏最小二乘模型回归方程的决定系数均高于0.950。得到传感器S1、S3、S5、S6、S8和S9的响应值与气相色谱-质谱结果具有较高的相关性。
[Abstract]:Taking Ningxia small tail Han sheep as the research object, the cooked duck meat was mixed into mutton in different proportion to make adulterated meat samples. The meat samples were detected quickly by electronic nose and gas chromatography-mass spectrometry (GC-MS). Based on the response of electronic nose to volatile components of meat samples, Fisher linear discriminant analysis and linear regression fitting analysis were used to identify qualitatively and quantitatively and establish models. At the same time, solid phase microextraction and gas chromatography-mass spectrometry were used to detect the samples. The results show that Fisher linear discriminant analysis can distinguish different samples, the correlation coefficient of linear regression fitting analysis is up to 0.965, and the correct rate of predicting adulteration by Fisher linear discriminant analysis is 98.2. A total of 26 volatile compounds were detected by gas chromatography-mass spectrometry, including 3-cycloheptene-1-one and 3-methylbutyraldehyde, which are thought to play an important role in distinguishing different samples. The determination coefficients of partial least squares regression equations established by electronic nose and gas chromatography-mass spectrometry were higher than 0.950. There is a high correlation between the response values of S _ (1) S _ (3), S _ (5), S _ (6), S _ (8) and S _ (9) and the results of gas chromatography-mass spectrometry (GC-MS).
