旅游饮食景观评价的初步研究

【摘要】:景观是一个地域综合体,囊括了多种形式的组合,饮食与景观具有天然的联系,它根植于特定地域,彰显着浓郁的地方特色,不仅满足基本生存需求,更是源于生活的审美体验。饮食景观(foodscape)是景观研究的新领域,当进入旅游中,其功能发生转变,作为旅游吸引物形成旅游饮食景观,这为旅游景观的理论研究和实际应用开拓了新思路。如何认识旅游饮食景观?如何评价旅游饮食景观?如何优化旅游饮食景观?是研究旅游饮食景观有待于解决的问题。 本文在总结饮食景观相关研究内容的基础上,形成对饮食景观的初步认识,并经过梳理景观概念体系提出了旅游饮食景观的基本概念。旅游景观学、集体记忆论、传播学、符号学等多学科理论的综合运用为探索旅游饮食景观的形成过程提供了理论依据,对饮食景观研究内容的阐释及质性研究方法(实地观察和访谈调查)的运用,则为剖析旅游饮食景观结构开启了思路。通过问卷调查获取基础数据,注重将定性化研究(理论探索)与定量化研究(结构方程模型、模糊综合评判法)相结合,本文构建了旅游饮食景观的评价指标体系及多层次模糊综合评判模型。本文采取实证主义研究思路对盱眙龙虾景观和青岛啤酒景观进行比较研究,最后,根据实证评价结果,基于旅游饮食景观的评价指标体系与权重进一步探索其设计与优化之路。 本文的主要研究结论如下: (1)基于相关理论,本文界定了旅游饮食景观的概念。即,能成为旅游吸引物,以饮食文化为主题而形成的具有明显的外部感知特色和强烈地方感的环境综合体。 (2)旅游饮食景观由饮食景观演进而来,经历了四个发展阶段:命名阶段、景观范围划定和功能完善阶段、品牌化阶段、形象认同阶段。其内在结构包含三大要素:饮食、环境、活动,三者功能各异、相互影响、相辅相成。 (3)建立旅游饮食景观评价模型。本文依据旅游饮食景观的构成,确定评价指标体系,包括1个一级指标(目标层)、3个二级指标(要素层)、14个三级指标(指标层),共同构成因素集。运用结构方程模型处理专家问卷数据,得到指标间的标准化路径系数,采用归一化方法求得权重,形成权重集。进而系统地运用模糊综合评判法,构建了旅游饮食景观的两级模糊综合评判模型,据此得出包含总体评价和要素评价的多层次评判模型。 (4)以盱眙龙虾景观和青岛啤酒景观为例,本文运用旅游饮食景观多层次模糊综合评判模型,对二者进行评价、比较,结果与实际情况基本吻合。实证研究表明,旅游饮食景观评价模型具有科学性、合理性。据此,本文从四方面系统地探讨了旅游饮食景观设计与优化的思路。
[Abstract]:Landscape is a regional complex, including a variety of forms of combination, diet and landscape has a natural relationship, it is rooted in a specific region, showing strong local characteristics, not only to meet the basic needs of survival, It is also from the aesthetic experience of life. Dietary landscape (foodscape) is a new field of landscape research. When it comes to tourism, its function changes and forms tourist diet landscape as a tourist attraction, which opens up a new idea for the theoretical research and practical application of tourism landscape. How to understand the tourist Diet Landscape? How to evaluate tourist Diet Landscape? How to optimize tourist Diet Landscape? It is a problem to be solved in the study of tourism food landscape. On the basis of summarizing the related research contents of dietary landscape, this paper formed a preliminary understanding of dietary landscape, and put forward the basic concept of tourism diet landscape after combing the concept system of landscape. The comprehensive application of multi-disciplinary theories such as tourism landscape theory, collective memory theory, communication theory, semiotics and so on provides a theoretical basis for exploring the forming process of tourism diet landscape. The interpretation of dietary landscape and the application of qualitative research methods (field observation and interview investigation) opened the way for analyzing the structure of tourist diet landscape. Through the questionnaire survey to obtain the basic data, pay attention to the combination of qualitative research (theoretical exploration) and quantitative research (structural equation model, fuzzy comprehensive evaluation method). In this paper, the evaluation index system of tourism food landscape and the multi-level fuzzy comprehensive evaluation model are constructed. This paper makes a comparative study on Xuyi lobster landscape and Tsing Tao Beer landscape by positivism. Finally, according to the results of empirical evaluation, the evaluation index system and weight of tourism diet landscape are used to further explore the way of design and optimization. The main conclusions of this paper are as follows: (1) based on the relevant theory, this paper defines the concept of tourism food landscape. That is, it can become a tourist attraction, with the theme of diet culture as the theme of the formation of a clear external perception of the characteristics and strong sense of the environment. (2) Tourism Diet landscape from the evolution of dietary landscape, It has gone through four stages: naming stage, landscape scope delineation and function perfection stage, brand stage, image identification stage. Its internal structure includes three major elements: diet, environment, activities, the three functions are different, mutual influence, complementary. (3) establish a tourism diet landscape evaluation model. According to the composition of tourist diet landscape, the evaluation index system is determined in this paper, including one primary index (target layer), three secondary indexes (element layer) and 14 third-level indexes (index layer), which together constitute the set of factors. The structure equation model is used to deal with the data of expert questionnaire, and the standardized path coefficient among the indexes is obtained, and the weight set is obtained by using the normalized method. Then the two-level fuzzy comprehensive evaluation model of tourism food landscape is constructed by using fuzzy comprehensive evaluation method. Based on this, a multi-level evaluation model including overall evaluation and element evaluation is obtained. (4) taking Xuyi lobster landscape and Tsing Tao Beer landscape as examples, this paper uses the multi-level fuzzy comprehensive evaluation model of tourism diet landscape to evaluate the two models. The results are in good agreement with the actual situation. The empirical study shows that the tourism diet landscape evaluation model is scientific and reasonable. On the basis of this, this paper systematically discusses the ideas of tourism diet landscape design and optimization from four aspects.
