抗战时期老鼎丰酱园市进研究

【摘要】：市进册是老鼎丰酱园档案中很重要的一部分,其主要内容是酱园之酱生、酱批、酱渣、乳批、酒批、豆渣、糟糠等历年收入情况及门面房租、利息等。老鼎丰酱园的主要业务与酱有关,故本文以市进册中的酱生、酱批和酱渣等历年收入信息为基础,结合平湖地区历年通货膨胀因素,考察收入所占比重以及历年变化,并简要分析影响其变化的各种因素。
[Abstract]:Market entry is a very important part of the archives of Laodingfeng Sauce Garden. Its main contents are sauce raw, sauce batch, sauce residue, milk batch, wine batch, soybean dregs, bran, etc., as well as facade room rent, interest and so on. The main business of Laodingfeng Sauce Garden is related to sauce. Therefore, based on the historical income information of sauce production, sauce batch and sauce dregs, and combining with the inflation factors in Pinghu area, the paper investigates the proportion of income and the changes in the past years. And briefly analyze the factors that affect its change.
