【摘要】：羊作为中国北方一种常见的牲畜,是非常重要的肉类食品来源之一,而羊肉在中国饮食上能有今天的地位是经过漫长的历史选择的结果。以小农经济为主的中国古代北方农业社会,能选择以羊肉作为主要的肉食之一,是有其深刻历史原因的。唐代作为中国历史的鼎盛时期,在饮食上不但继承了之前的历史经验,而且在进一步发展和丰富后使之深刻影响到了后世。羊肉作为北方游牧民族的主要肉食,逐渐的挑战和超越猪肉在汉人肉类饮食中的地位,并在唐代发展成为主要的肉类饮食,这一过程包含了极其丰富的历史内容。研究唐代羊肉饮食可以帮助我们认识中华民族在饮食上形成的丰富文化和积累的宝贵经验,还能观察到唐代丰富多彩的社会生活,从羊肉饮食的角度丰富我们对于唐代政治,经济,文化,以及社会保障等诸多问题的研究,因此具有重要的学术价值和意义。本文通过对唐代羊肉饮食的时间和空间上的论述,详细的分析了唐代北方羊肉饮食的具体情况。从社会各个阶层的消费,到唐人在羊肉饮食上的具体操作和知识积累,再到唐代前后时期羊肉饮食的形态,较为全面的勾勒了唐人羊肉饮食的盛况,并进一步分析了唐人羊肉饮食的重要影响。根据羊肉饮食的特点,全文共分为五个部分。第一部分是绪论,主要介绍了本题选题的原因和依据以及选题的目的,回顾了本题的研究状况,并阐述了笔者在写作过程中所要解决的问题及拟采取的研究方法。第二部分是对唐代羊肉来源情况的概述。笔者通过对唐代以前羊养殖业发展的探索,和对唐代羊养殖业的机构设置和规模的研究,以及对唐代各种政治军事活动和社会生活中羊肉来源的资料研究,展示出唐代羊肉饮食兴盛的丰富物质基础。三、四部分是全文的重点。在第三部分中,主要论述了羊肉消费群体,较为全面的呈现了唐代北方的羊肉饮食状况和重要意义。本部分从唐代各个阶层的羊肉消费状况入手,展示了唐人对羊肉的青睐程度,并从有关羊肉消费的诸多史料记载中体现唐代各个阶层对于羊肉饮食的同与不同。进而从中了解唐代北方羊肉饮食的基本消费情况以及唐人在此基础上形成的社会生活方式,为下文进一步研究做好了铺垫。第四部分以羊肉的消费情况为基础,首先是对唐代羊肉菜肴的收集,展现羊肉在唐代各个阶层中不同的饮食方式,再进一步衍伸到唐代羊肉饮食的食疗经验。这些内容既展示了唐代羊肉饮食所积累的丰富经验,又呈现出中国古代特有的深厚文化底蕴对羊肉饮食的包容和探索,并且从唐以后的一个大概的羊肉消费情况也可以看出唐代羊肉饮食的重要历史作用。羊肉饮食在唐代发展到一个高峰,这是由当时的社会条件以及羊肉生产和消费的诸多特点决定的。既是人们自身对饮食选择的结果,也是历史趋势的一种表现。唐代北方社会的羊肉饮食深刻体现了这个时代社会饮食生活的丰富多彩,也说明了唐代对中国北方羊肉饮食习惯形成的重要影响。唐代北方羊肉饮食影响到了在汉族人生活的诸多方面,并成为肉食的主要选择之一。这既反映出唐人生活的丰富内容,也由于饮食文化在中国文化中的重要地位,显示出了羊肉饮食和文化之间的相互影响。
