热量标签中数据精确性对热量感知与食品选择的影响研究

【摘要】:肥胖问题在世界各国越来越普遍和严重,许多国家采用食品热量信息干预,如强制提供卡路里信息,以期控制肥胖率的增长。但是只提供卡路里信息,很多人没有概念,也不在意,实践效果远未达到预期。最近,有科学家呼吁用燃烧食物热量运动信息替代食品包装上的卡路里信息,以帮助消费者选择低热量健康食品。以往与燃烧食物热量运动信息相关的研究中,运动信息的呈现方式及标识的数据精确性不相一致,而数字的精确性会影响认知,因而本文主要研究两个问题:燃烧食物热量运动数据精确性是否会导致热量感知偏差?如果会,这种判断偏差是否会影响食品选择?我们提出,人们倾向于高估精确运动数据下的食品热量相对于大小幅度类似但精确性较低或圆整的运动数据,称为“燃烧食物热量运动数据精确效应”,而且这种效应能抑制消费者选择高热量非健康食品。本研究主要采取实验法,设计了六个互相关联的实验来验证提出的假设。实验1和实验2分别以文本说明形式和图文标签形式呈现运动信息,检验以上精确效应的存在;实验3则深入研究该精确效应发生的心理机制——热量感知唤醒度的中介效应;实验4和实验5通过不同量级单位表示数量信息来探讨该精确效应的边界条件;实验6是一个现场实验,研究真实食品决策情境下运动数据精确性对食品选择的影响。通过访谈、问卷和实验刺激等方式收集了大量的实验数据,运用SPSS进行方差分析、bootstrap中介检验及卡方检验等得出以下结论:(1)燃烧食物热量运动数据精确性会导致热量感知偏差,人们认为越精确的运动数据对应更高的食物热量,例如,被试会错误地判断徒步行走4.87公里燃烧的巧克力热量高于徒步行走5公里时;(2)揭示了以上精确效应发生的心理机制—运动数据越精确,越能引起消费者的关注和重视,唤醒负面情绪,进而赋予热量信息更高的权重,判断食物热量更高;(3)不同量级单位表示信息(数据本身大小级别)会对以上精确效应产生调节作用——当以大单位(小数字)表示运动信息时,精确效应非常显著,但以小单位(大数字)表示运动信息时,精确效应消失了;(4)以精确运动数据呈现相对热量信息,可轻推消费者选择低热量健康食品。
[Abstract]:The problem of obesity is becoming more and more common in all countries of the world . Food calorie information intervention is adopted in many countries to control the growth of obesity . However , only calorie information is provided . Many people do not have the concept and the accuracy of identification is not consistent . In the past , scientists called for the use of calorie movement information for burning food to replace calorie information on food packaging .
Experiment 3 studies the mediating effect of the psychological mechanism _ heat perceived wake - up degree of the exact effect .
Experiment 4 and Experiment 5 discuss the boundary conditions of the exact effect by means of the quantity information of different magnitude units ;
Experiment 6 is an off - site experiment to study the influence of motion data accuracy on food selection in real food decision - making situation . Through interviews , questionnaires and experimental stimulation , a lot of experimental data is collected . The results are as follows : ( 1 ) The accuracy of calorie movement data of burning food can lead to thermal perception deviation .
( 2 ) revealing the psychological mechanism of the above precise effect - the more accurate the movement data , the more the attention and attention of the consumer can be caused , the negative emotion is aroused , the weight of the heat information is further added , and the food heat is judged to be higher ;
( 3 ) The information ( data itself size level ) of different magnitude units can adjust the above exact effect _ when the motion information is represented by large units ( small numbers ) , the exact effect is very significant , but when the motion information is represented by small units ( large numbers ) , the exact effect disappears ;
( 4 ) the relative heat information is presented with accurate motion data , and the low - calorie health food can be selected by the consumer .
