青海藏区寄宿制中小学食堂从业人员营养知识行为现状

【摘要】：目的了解青海省藏区寄宿制中小学食堂从业人员营养知识、态度、行为状况,为开展寄宿制学校营养健康教育和健康促进工作提供依据。方法随机整群抽取青海省2个藏族自治州4县10所寄宿制中小学校食堂从业人员111名,对食品营养知识、态度、行为开展现场问卷调查。结果食堂从业人员营养知识总体知晓率为50.45%,"生熟食物要分开"知晓率最高为100%,"哪类食物日常摄入最多"知晓率最低为4.5%,营养知识缺乏;88%以上从业人员营养态度较好;12个方面的营养行为形成率只有"食物尽快吃完""不喜盐食物""做菜工序"3个方面在90%以上,其余9个方面均在70%以下,"炒菜加碘盐时间"只有16.22%,"购买和制作食物关心因素"为26.13%。50%以上从业人员希望得到系统的营养知识培训。结论青海省藏区寄宿制学校食堂从业人员缺乏营养知识,食品营养态度积极,行为还需不断养成。应加强藏区寄宿制学校食堂从业人员营养健康教育和健康促进工作。
[Abstract]:Objective to understand the nutritional knowledge, attitude and behavior of the staff in boarding primary and middle school canteens in Qinghai Province, and to provide the basis for carrying out nutrition health education and health promotion in boarding schools. Methods A total of 111 canteens from 10 boarding schools in 4 counties of 2 Tibetan autonomous prefectures in Qinghai Province were randomly selected and investigated with questionnaire on food nutrition knowledge attitude and behavior. Results the overall understanding rate of nutrition knowledge of employees in canteen was 50.455.The awareness rate of "raw food should be separated" was 100, and that of "what kind of food was the most ingested" was 4.5. the nutritional attitude of employees lacking nutrition knowledge was more than 88%. All right; the nutritional behavior formation rate in 12 areas is over 90% only in the three aspects of "eat food as soon as possible," do not like salt food, "and" cooking process. " The other nine aspects were below 70%, the time of iodized salt in fried vegetables was 16.2222, and the concerned factors of purchasing and making food were 26.13.50% of the employees who wanted to get systematic training in nutrition knowledge. Conclusion the staff of boarding school canteen in Tibetan area of Qinghai province lack nutrition knowledge, positive attitude towards food nutrition, and need to be cultivated constantly. Nutrition and health education and health promotion should be strengthened for canteen workers in boarding schools in Tibetan area.
