香菇多糖—壳聚糖可食性复合膜的制备及性能研究

【摘要】:本文采用天然大分子多糖类物质壳聚糖为主要的成膜材料,以甘油作为增塑剂,按比例添加香菇多糖,并通过共混、流延的方式制备一种新型的可食性复合膜。实验中以香菇多糖-壳聚糖复合膜的抗拉强度、断裂延伸率、水蒸气透过率、阻氧性和透明度为主要指标,经Design Expert软件进行响应面优化后得到复合膜制备的最佳方法为:壳聚糖含量2.10%(质量分数),香菇多糖含量0.69%(质量分数)和甘油含量19.12%(占壳聚糖与香菇多糖质量和的百分比),在壳聚糖溶于1.5%乙酸溶液,香菇多糖溶于蒸馏水后,三者混合搅拌,并于60℃下干燥成膜。此条件下复合膜的抗拉强度为29.78MPa,断裂延伸率为12.32%,水蒸气透过率为3.427×10-11g/(m·s·Pa),阻氧性(以油脂过氧化值表示)为4.605g/100g,透明度为20.205%。由红外光谱图和X-射线衍射图表征了添加香菇多糖后复合膜的相容性。结果显示,香菇多糖的加入引起了复合膜特征吸收峰的迁移和强弱变化,使其衍射峰减弱甚至消失,表明用于制备复合膜的香菇多糖和壳聚糖之间存在着强烈的相互作用,各组分间有着一定程度的相容性。将可食性复合膜用于软包装材料,封口制袋的过程必不可少。分别对粘合剂(壳聚糖溶液)浓度、热封温度、热封时间、热封压力对复合膜封合强度的影响进行研究。又在单因素试验的基础上,通过正交试验对封口工艺进行优化,结果得到,复合膜的最佳封合工艺:热封温度为140℃,热封时间为3.5s,热封压力为0.3MPa,此时复合膜的封合强度可达12.03N/15mm。
[Abstract]:In this paper, chitosan, a natural macromolecular polysaccharide, was used as the main film-forming material, glycerin was used as plasticizer, lentinan was added in proportion, and a new edible composite membrane was prepared by blending and casting. The main indexes were tensile strength, elongation at break, water vapor transmittance, oxygen resistance and transparency of Lentinus edodes polysaccharide / chitosan composite membrane. The optimum preparation method of the composite membrane by Design Expert software is as follows: chitosan content 2.10 (mass fraction), lentinan content 0.69 (mass fraction) and glycerol content 19.12% (account for chitosan and lentinan polysaccharide quality and 100%). When chitosan was dissolved in 1.5% acetic acid solution, Lentinus edodes polysaccharides were dissolved in distilled water, mixed and stirred, and dried at 60 鈩,
