基于风险管理角度的食品供应链管理研究

【摘要】:食品是我们人类赖以生存和发展的基本物质,是人们在日常生活中最基本的必需品。因此,食品质量的高低、安全与否直接关系到消费者的身体健康、国家的稳定以及整个社会的进步。在目前的市场条件下,食品行业内企业间的竞争已经逐步转变为供应链之间的竞争。然而由于不同于工业产品,食品由于其自身的自然属性使其对于供应链的要求非常之高,供应链的设计也因此越来越复杂。在日益复杂的供应链条件下风险事件也不断发生,给供应链上的相关企业往往带来不可预知的损失。因此如何准确地识别出食品供应链潜在的风险因素,并对他们进行科学合理的评估,总结出有效的风险控制建议就成为食品供应链管理的一个重要议题。 本文总结了食品供应链管理和风险管理的研究现状和特点,对国内外的研究成果进行了总结,并在此基础上进行了深入研究。首先将食品供应链中风险来源的主体划分为三大类风险因素,分别是外部因素、内部因素和关联因素。在这三大类风险因素的基础上又对其进行了深入的剖析,,最终总结出十六种具体的风险因素。即经济环境风险、自然环境风险、法律环境风险、产业政策风险、政治风险、食品质量风险、流运输风险、生产风险、存货风险、财务风险、销售风险、企业道德风险、结构风险、相互信任风险、合作风险、信息风险。之后总结出风险因素的四种评估指标,分别是危害性、可能性、不可控性以及传染性,再根据有关食品企业进行调查研究的基础上利用层次分析法对识别出的风险因素进行了评估。建立了风险因素层次模型,计算出了每种风险在四种风险属性下的权重值。最终根据风险影响力计算公式得出了食品供应链中每种风险因素的风险影响力权重值。最后根据评估出的结果,对各风险因素进行了排序。得出在食品供应链系统中对供应链安全性影响力较为明显的几个风险因素依次是食品质量风险、物流运输风险、合作风险、生产技术风险、信任风险、道德风险、结构风险、信息沟通风险。并对影响力明显的风险指标提出了具体的控制防范建议,从而达到对供应链风险管理的目的。
[Abstract]:Food is the basic material for our survival and development, and the most basic necessity in our daily life. Therefore, the quality of food, safety or not directly related to the health of consumers, the stability of the country and the progress of the whole society. Under the current market conditions, the competition among enterprises in the food industry has gradually changed into the competition between supply chains. However, different from industrial products, food has a very high demand for supply chain because of its natural properties, and the design of supply chain is becoming more and more complex. Under the increasingly complex supply chain conditions, the risk events also occur constantly, which often bring unpredictable losses to the related enterprises in the supply chain. Therefore, how to accurately identify the potential risk factors in food supply chain, and evaluate them scientifically and reasonably, and summarize effective risk control suggestions has become an important issue in food supply chain management. This paper summarizes the research status and characteristics of food supply chain management and risk management, summarizes the research results at home and abroad, and further studies on this basis. Firstly, the main body of risk source in food supply chain is divided into three types of risk factors, namely external factors, internal factors and related factors. On the basis of these three kinds of risk factors, this paper makes a deep analysis of them, and finally summarizes 16 kinds of specific risk factors. Namely, economic environment risk, natural environment risk, legal environment risk, industrial policy risk, political risk, food quality risk, flow risk, production risk, inventory risk, financial risk, sales risk, enterprise moral hazard, Structural risk, mutual trust risk, cooperation risk, information risk. And then summed up the four assessment indicators of risk factors, namely, harmfulness, possibility, uncontrollability and infectivity. On the basis of the investigation and research of the food enterprises, the risk factors identified were evaluated by analytic hierarchy process (AHP). The hierarchical model of risk factors is established and the weights of each risk under four risk attributes are calculated. Finally, the weight of each risk factor in food supply chain is obtained according to the formula of risk influence. Finally, according to the evaluation results, the risk factors are ranked. Several risk factors which have obvious influence on supply chain safety in food supply chain system are food quality risk, logistics transportation risk, cooperation risk, production technology risk, trust risk, moral hazard, structural risk, etc. Communication risk. And put forward the concrete control and prevention suggestion to the risk index with obvious influence, so as to achieve the purpose of risk management in supply chain.
