基于供应链的预包装食品追溯平台设计与实现

【摘要】：随着食品产业的快速发展,社会管理领域中的食品安全问题日益突出,人们更加关注自身的生活水平。当前食品安全问题是多问题、复杂原因、后果严重的情况。近年时有发生的三聚氰胺奶粉、瘦肉精猪肉、染色馒头、墨汁粉条、地沟油等重大食品安全事件都突出了我国食品安全的薄弱现状,这充分表明我国现阶段属于食品安全风险高发期和问题高发期。同时,我国现有食品质量溯源系统多为内部生产过程的溯源系统,能满足企业自身的内部管理需求,但很难实现溯源信息共享。由于溯源链条短,没形成上下游企业间的溯源信息传递,无法实现从生产到流通的全过程溯源与监管。另一方面,由于缺乏食品溯源信息的公共查询平台,消费者的知情权得不到有效保障,因此消费者无法辅助相关行政部门进行有效的社会监督。本文提出一款基于供应链的预包装食品追溯平台。以供应链管理、可追溯管理等理论为基础,结合国内食品生产、经营企业的实际经验与需求,构建覆盖原料、生产、流通、消费的全环节追溯平台。该平台能够为社会公众、监管部门和食品企业提供溯源信息服务。文章首先分析传统食品追溯平台的优势和不足,然后介绍基于供应链的预包装食品安全追溯平台的需求和功能范围,最后重点阐述该平台的完整设计和实现。
[Abstract]:With the rapid development of the food industry, the problem of food safety in the field of social management is becoming more and more prominent. People pay more attention to their own living standards. The problems of food safety are many problems, complicated reasons and serious consequences. The big food safety events have highlighted the weak status of food safety in China, which fully indicates that the present stage of our country belongs to the high risk period of food safety and the high incidence of problems. At the same time, the traceability system of the existing food quality in our country is the traceability system of the internal production process, which can meet the internal management needs of the enterprise itself, but it is difficult to realize the traceability letter. As the traceability chain is short, the source information transmission between upstream and downstream enterprises is not formed, and the whole process from production to circulation can not be traced to the source and supervision. On the other hand, the consumer's right to know is not effectively guaranteed because of the lack of food traceability information, so consumers can not assist the relevant administrative departments. Effective social supervision. This paper proposes a pre packaged food traceability platform based on supply chain. Based on the theory of supply chain management, traceability management and other theories, it combines the domestic food production and the actual experience and needs of the enterprise to build a full link traceability platform covering raw materials, production, circulation and consumption. This platform can be used for the public and the supervision of the public. The article first analyzes the advantages and disadvantages of the traditional food traceability platform, and then introduces the demand and function range of the pre packaged food safety traceability platform based on the supply chain. Finally, it focuses on the complete design and implementation of the platform.
