活贝上岸后储运环境对其品质影响的研究进展

【摘要】:鲜活是贝类最主要的品质指标,是决定其价值的主要因素,储运是贝类供应链不可或缺的环节,活贝由于其采捕后生存环境的变化,遭受胁迫,肉质会产生变化,甚至死亡。对活体贝类上岸后储运环节的净化、暂养、无水运输等工艺环境对品质的影响研究进行综述,并探讨活体贝类储运工艺环境未来的发展方向。
[Abstract]:Fresh life is the most important quality index of shellfish and the main factor to determine its value. Storage and transportation is an indispensable link in the supply chain of shellfish. Because of the change of survival environment after harvesting, the meat quality of live shellfish will change or even die because of the change of survival environment after harvesting. This paper summarizes the research on the effect of the process environment on the quality of the living shellfish after disembarking, such as purification, temporary cultivation and anhydrous transportation, and probes into the future development direction of the living shellfish storage and transportation technology environment.
