基于RFID技术的猪肉食品安全追溯系统研究

【摘要】:猪肉在我国居民日常生活消费结构中占有重大比例,,是人们生活主要食用消费品,其食品安全状况涉及百姓身体健康和基本消费安全。由于我国的肉类食品安全管理普遍采用“终端检验”方式,而严重缺乏对饲养、屠宰、加工等过程的有效监控与管理,因此导致无法快速、准确地实现产品质量追踪与追溯。本文通过我国猪肉生产实际加工流程,对猪肉食品安全追溯系统进行了研究。 首先,对比了国内外研究现状,总结出我国猪肉食品安全追溯系统存在的问题。从食品安全追溯的定义和原理出发,分析了实现食品安全追溯的RFID技术、溯源编码方案及标识技术,为追溯系统的搭建奠定了理论和技术基础。 其次,以猪肉食品安全供应链为基础,确定了猪肉在整个供应链的产品标识方案。以HACCP食品安全体系为应用方法,确定了追溯系统的关键控制环节和溯源信息,明确了食品安全追溯的方法,完成了系统的业务流程分析。接着通过Petri网模型对追溯系统的业务流程进行了建模,并利用其中的矩阵方程评价方法对建模的合理性进行了评价。 然后对食品安全追溯系统进行了软件功能的详细设计,按照中心管理平台系统、养殖管理系统、屠宰管理系统、物流运输管理系统和分割销售管理系统进行划分,设计了相应的功能模块设计图,并对供应链各环节的溯源管理进行了研究。 最后,对本文的研究进行了总结,讨论了研究过程中存在的问题,并对系统的应用提出了几点展望。
[Abstract]:Pork occupies a significant proportion in the consumption structure of daily life of our country, and it is the main consumer goods in people's life, and its food safety situation involves the people's health and basic consumption safety. Because the method of "terminal inspection" is widely used in the safety management of meat products in our country, and there is a serious lack of effective monitoring and management in the process of raising, slaughtering and processing, it is impossible to track and trace the quality of products quickly and accurately. In this paper, the traceability system of pork food safety was studied through the actual processing process of pork production in China. Firstly, the problems of pork food safety traceability system in China are summarized by comparing the current research situation at home and abroad. Based on the definition and principle of food safety traceability, this paper analyzes the RFID technology, traceability coding scheme and labeling technology for food safety traceability, which lays a theoretical and technical foundation for the establishment of traceability system. Secondly, based on the pork food safety supply chain, the product identification scheme of pork in the whole supply chain is determined. Taking the HACCP food safety system as the application method, the key control links and traceability information of the traceability system are determined, the method of food safety traceability is clarified, and the business process analysis of the system is completed. Then the business process of the traceability system is modeled by the Petri net model and the rationality of the modeling is evaluated by the matrix equation evaluation method. Then the detailed design of the software function of the food safety traceability system is carried out, which is divided according to the central management platform system, the aquaculture management system, the slaughtering management system, the logistics transportation management system and the partition sales management system. The corresponding design diagram of function module is designed, and the traceability management of each link of supply chain is studied. Finally, this paper summarizes the research, discusses the existing problems in the research process, and puts forward some prospects for the application of the system.
