基于“帕戈郎”清真鸡肉的乌鲁木齐市肉类流通追溯系统应用研究

【摘要】:近年来,疯牛病、禽流感和口蹄疫等家禽家畜类疫病爆发频繁,肉类食品质量安全堪忧,已严重影响消费者的身体健康。目前,发达国家已出台了相关法律法规,针对肉类产品质量安全可追溯性提出强制性要求。家畜产品的可追溯性可能会成为新的贸易壁垒,影响我国畜产品的国际市场竞争力。因此构建一个囊括生产加工、运输、销售所有环节的肉制品溯源系统,实现肉品全程溯源,对确保我国肉品的优质和安全,提高肉品产量和行业竞争力,特别是打破肉制品的国际技术壁垒均具有深远的社会和经济意义。新疆“帕戈郎”清真食品公司主要从事禽类现代化屠宰加工、冷链屠宰加工、冷链物流配送、品牌连锁销售一体化经营业务。通过对家禽Itasystem标签化管理,标记企业品牌和条码,形成有效的追溯,保护生产者和消费者的合法权益。本文以“帕戈郎”清真食品公司为例,对清真鸡肉产品追溯系统的设计思想、溯源流程、溯源方案的实施等进行了研究。研究内容主要包括以下几个方面:第一,对系统开发过程中质量溯源系统与物联网的基础理论、物联网和二维码技术、WebGIS技术等在溯源系统中的应用进行了分析。第二,比较分析了国内外食品质量溯源系统的应用现状,对新疆鸡肉养殖场、生产厂家、相关食品安全监管单位及对乌鲁木齐市消费者购买可追溯农产品的意愿进行了相关调查,掌握了消费者及市场运营机制对鸡肉制品溯源系统的需求程度,初步确定鸡肉产品溯源系统的研究内容,并提出切实可行的解决方案。第三,在上述研究的基础上,设计“帕戈郎”清真鸡肉溯源系统的总体方案,确定了产品追溯的5个关键点,即养殖、屠宰、加工、冷藏、检测等。第四,开发实现了“帕戈郎”清真鸡肉产品的溯源流程。以“帕戈郎”清真鸡肉产品为例,将具体的开发设计的溯源系统在该产品中予以实施,重点阐述在“帕戈郎”清真鸡在孵化、养殖、活鸡收购、宰前检疫、产品冷藏、出厂检疫、产品销售等环节溯源流程的设计和系统功能实现。
[Abstract]:In recent years, mad cow disease, bird flu and foot-and-mouth disease and other poultry and livestock diseases have frequently broken out, and the quality and safety of meat products have become a serious concern, which has seriously affected the health of consumers. At present, the developed countries have issued relevant laws and regulations. The traceability of livestock products may become a new trade barrier and affect the competitiveness of our country's livestock products in the international market. The traceability system of meat products in all parts of the market can ensure the quality and safety of meat products in our country, improve the output of meat products and enhance the competitiveness of the industry, so that the whole course of meat products can be traced back to the source. In particular, breaking down the international technical barriers to meat products has far-reaching social and economic significance. Xinjiang "Pagorang" halal food company is mainly engaged in modern poultry slaughtering processing, cold chain slaughtering processing, cold chain logistics distribution, Brand chain sales integrated business. Through the poultry Itasystem label management, label enterprise brand and bar code, form an effective traceability, protect the legitimate rights and interests of producers and consumers. This article takes "Pagorang" halal food company as an example, The design idea, traceability flow and the implementation of traceability scheme of halal chicken product traceability system are studied. The research contents mainly include the following aspects: first, The basic theory of quality traceability system and Internet of things, the application of Internet of things and WebGIS technology in traceability system are analyzed. Secondly, the application status of food quality traceability system at home and abroad is compared and analyzed. A related investigation was conducted on chicken farms, manufacturers, relevant food safety regulatory units and consumers' willingness to buy traceable agricultural products in Urumqi. Grasps the consumer and the market operation mechanism to the chicken product traceability system demand degree, preliminarily determines the chicken product traceability system research content, and proposes the feasible solution. Third, in the above research foundation, The overall scheme of "Pagorang" halal chicken traceability system was designed, and five key points of product traceability were determined, that is, breeding, slaughtering, processing, refrigeration, detection, etc. 4th, The traceability process of "Pagorang" halal chicken product is developed and realized. Taking "Pagorang" halal chicken product as an example, the specific traceability system of development and design is implemented in this product, and the emphasis is laid on the hatching of "Pagorang" halal chicken. Design and system function realization of traceability flow of breeding, live chicken purchase, premortem quarantine, product refrigeration, factory quarantine and product sales.
