卷烟质量安全监控体系的研究

【摘要】:卷烟产品很特殊,和一般的食品有所差别,卷烟可供人们直接吸食,但是它本身对人体具有一定的危害。因此,卷烟的质量安全是人们格外关注的,也是所有食品质量安全中的重中之重。卷烟生产是一种自动化程度很高的流水线式生产,具有加工工艺繁多复杂的特点,从原料到成品的整个过程都有可能出现质量安全问题,因此,本文从卷烟加工流程入手,建立一个卷烟质量全监控体系,并加以分析研究。此体系的建立是为了规范卷烟生产流程,提高卷烟产品质量。对制丝和卷接包两大加工过程进行安全分析,确定危害,进行改进,因此,这是一个基于产品质量安全,并具有管理功能的过程控制体系。本文以危害分析与关键控制点(Hazard Analysis Critical Control Point, HACCP)的原理为依据,并将统计过程控制技术中的控制图整合到HACCP体系中。首先成立一个HACCP小组,小组成员既包括拥有决策权的领导,又有生产、设备、质量检测、物流等各部门的成员;其次,描述产品,主要叙述产品本身的一些属性,并且要确定它的预期用途;然后,绘制卷烟生产流程图,并且到现场进行确认。基本工作完成以后,就开始对卷烟生产流程进行危害分析,运用故障树分析法,从人、机、料、法、环等五个方面对生产过程可能产生的物理、化学和生物三种危害进行识别,通过判断树分析法的四个问题对显著危害进行判定,确定关键控制工序。然后将控制图运用到控制工序中,验证关键工序是否处于稳定状态,过程能力是否充足。最后建立关键控制工序的关键限值,以及具有监控、纠偏和验证等功能的措施,然后将这一整个过程中涉及到的一切人、事、物进行记录和保存。最后,验证体系的实施效果,本文选取卷烟总体质量合格率和顾客满意度两个指标进行评价,对比应用前后卷烟总体质量合格率的变化,并运用美国顾客满意度模型(American Customer Satisfaction Index, ACSI)对顾客满意度指数的计算,结果显示,应用前后卷烟总体质量合格率明显提高,顾客满意度指数也有所上升。
[Abstract]:Cigarette products are very special and different from common foods. Cigarettes can be smoked directly by people, but they are harmful to human body. Therefore, the quality and safety of cigarettes is a special concern, and also the most important of all food quality and safety. Cigarette production is a kind of pipeline production with high degree of automation. It has the characteristics of numerous and complicated processing technology. The whole process from raw material to finished product may have quality and safety problems. Therefore, this paper starts with the process of cigarette processing. To establish a total monitoring system of cigarette quality and analyze it. The aim of this system is to standardize the process of cigarette production and improve the quality of cigarette products. The process control system is based on product quality and safety and has the function of management. Based on the principle of Hazard Analysis critical Control Point (HACCP), the control chart of statistical process control technology is integrated into HACCP system in this paper. First of all, a HACCP group was set up. The members of the group included leaders with decision-making power, as well as members of various departments such as production, equipment, quality inspection, logistics, etc. Secondly, describing the product, mainly describing some attributes of the product itself, And to determine its intended use; then, draw the cigarette production flow chart, and to the site to confirm. After the basic work has been completed, we begin to carry out hazard analysis on the cigarette production process. By using the fault tree analysis method, we can identify the possible physical, chemical and biological hazards in the production process from five aspects: human, machine, material, method and ring. The key control procedures are determined by judging the four problems of tree analysis. Then the control chart is applied to the control procedure to verify whether the key process is in a stable state and whether the process capability is sufficient. Finally, the critical limit value of the key control procedure and the measures with the functions of monitoring, correcting and verifying are established, and all the people, things and objects involved in the whole process are recorded and preserved. Finally, verify the effect of the implementation of the system, this paper selected the overall quality of cigarettes qualified rate and customer satisfaction two indicators to evaluate, compare the changes of the overall quality of cigarettes before and after the application of qualified rate. The American customer satisfaction Index (ACSI) was used to calculate the customer satisfaction index. The results showed that the overall qualified rate of cigarette quality and the customer satisfaction index increased significantly before and after the application.
