南京市传统豆制品加工业发展现状与对策研究

【摘要】:在食品安全关注白热化的今天,在我国"菜篮子"中占据越来越多份额的传统豆制食品的安全性也得到的人们的关注。民以食为天,消费习惯与消费水平都在不断提升的大众消费者从关心菜品的口味渐渐向菜品对身体健康的影响转变,传统豆制品就是人们关心的一道家常食品。发展传统豆制品加工业具有一定的经济价值与文化价值,大部分扎根在城市边缘或农村的传统豆制品企业,在为人们提供美味食物的时候,也同时带动了当地经济与文化的发展。目前我国传统豆制品生产量迅速增长,产品种类日益增多,消费市场有很大潜力。城市传统豆制品加工业市场日趋规范,产品质量稳步提升,但是部分城市及城乡结合地区、农村地区的市场监管任务十分艰巨。传统豆制品加工业规模化速度提升,自动化步伐也不断加快,传统豆制品品牌意识有所加强,地方政府已有意识地开展小型豆制品作坊的规范和引导工作。同时,传统豆制品的工艺技术和设备机械化水平不断提高,但是相比国际先进水平仍有很大差距。近年来,在政府的支持下,行业管理工作取得一定成效,全国及地方豆制品行业协会的作用开始显现,但是作用效力有限。纵观我国的传统豆制品加工业,可说是成绩与问题同在,机遇和挑战并存。南京市作为江苏省省会城市,其传统豆制品企业数量较多,人们对传统豆制品的口味与质量也更为关注。伴随着这个城市的发展,南京市传统豆制品加工业目前呈现出欣欣向荣的态势,源源不断地为南京市以及其他市区的人们提供日常豆制品,在满足南京人民饮食需求的同时,呈现出如传统豆制品加工企业数量逐步减少,豆制品质量大幅提高;传统豆制品品种多样化、品牌化逐渐增强;传统豆制品加工业市场潜力大;政府扶持与监管双管齐下的状态。与此同时,南京市传统豆制品加工业也存在着许多历史遗留问题和现代发展带来的新问题。问题主要包括小作坊生产仍有较多数量;加工工艺不规范,科技含量低;加工设备简单,生产方式落后;产品包装落后,不适应现代物流要求;名牌意识薄弱;政策扶持力度小,资金投入少等。针对南京市传统豆制品加工业出现的问题,要加大宣传力度,提高发展传统豆制品加工业重要性的认识。要严格遵守行业标准,加大监管力度。要研发先进加工工艺和设备,培养高新技术人才。同时,完善包装和冷链物流运输。适应时代发展,创名牌,走品牌战略。政府加大政策扶持力度,主要从税收、资金、品牌扶持三个方面入手。最后,重视豆制品行业协会的作用,要完善豆制品行业协会建设。
[Abstract]:In today's food safety concerns, the safety of traditional bean food, which accounts for more and more of the "vegetable basket" in China, has also attracted people's attention. People take food as the day, consumption habits and consumption level are constantly improving, the popular consumers gradually change from caring about the taste of dishes to the influence of food on health. Traditional bean products is a family food that people care about. The development of traditional soybean processing industry has a certain economic and cultural value, most of the traditional soybean products enterprises rooted on the edge of the city or in rural areas, while providing people with delicious food, It also promotes the development of local economy and culture. At present, the production of traditional soybean products in China is increasing rapidly, the kinds of products are increasing day by day, and the consumer market has great potential. The market of traditional soybean products processing industry is becoming more and more standardized, and the quality of products is improving steadily. However, in some cities and the combination of urban and rural areas, the task of market supervision in rural areas is very arduous. The speed of traditional soybean processing industry has been improved, the pace of automation has been quickened, the brand awareness of traditional soybean products has been strengthened, and local governments have consciously carried out the standardization and guidance work of small soybean products workshops. At the same time, the mechanization level of traditional soybean products technology and equipment has been improved, but compared with the international advanced level, there is still a big gap. In recent years, with the support of the government, the industry management has made some achievements, the national and local soybean industry associations have begun to show the role, but the effect is limited. Throughout China's traditional soybean processing industry, it can be said that achievements and problems exist, opportunities and challenges coexist. Nanjing, as the capital city of Jiangsu Province, has more traditional soybean products enterprises and people pay more attention to the taste and quality of traditional bean products. With the development of this city, Nanjing's traditional bean products processing industry is now showing a thriving trend, providing daily soybean products to people in Nanjing and other urban areas constantly, while meeting the dietary needs of the people in Nanjing. For example, the number of traditional soybean products processing enterprises gradually decreased, the quality of soybean products was greatly improved, the variety of traditional soybean products was diversified, the brand gradually strengthened, the market potential of traditional soybean products processing industry was great. The state of both government support and regulation. At the same time, there are many problems left over from history and new problems brought by modern development in Nanjing traditional soybean processing industry. The main problems include the small workshop production still has a large number; the processing technology is not standardized, the science and technology content is low; the processing equipment is simple, the production mode is backward; the product packaging is backward, does not adapt to the modern logistics request; the famous brand consciousness is weak; The policy support dynamics is small, the fund investment is small and so on. In view of the problems of traditional soybean processing industry in Nanjing, it is necessary to strengthen propaganda and raise the awareness of the importance of developing traditional soybean products processing industry. We should strictly abide by industry standards and step up supervision. We should develop advanced processing technology and equipment and train high-tech talents. At the same time, improve packaging and cold-chain logistics transport. Adapt to the development of the times, create brand name, brand strategy. Government increase policy support, mainly from tax, capital, brand support three aspects. Finally, attach importance to the role of soybean industry associations, to improve the construction of soybean industry associations.
