区域间水产品消费水平与消费特征比较分析

【摘要】:水产品因为它的营养价值被人们逐步深刻地认识,使得其市场和消费群体逐步扩大,需求量逐年增加,水产业的发展关乎着各国人民饮食结构和营养水平,世界上约有10亿左右的人口依赖水产品来摄取生命所需的动物蛋白质,在我国水产品已经占到家庭饮食结构的11%左右,我国地域广阔,不同地区在自然资源禀赋、经济发展水平和文化习俗等方面存在明显的差异,并因此导致了水产品消费水平和消费特征的区域性差异,本文从区域角度出发,在对全国、东部地区、中部地区、西部地区水产品生产情况、消费情况进行对比分析的基础上,对不同区域居民水产品消费水平以及包括购买倾向、消费种类、消费形态、消费场所、购买场所等消费特征存在的差异进行了比较分析,并以此为基础,有针对性地提出了提高不同地区居民水产品消费水平的对策。本文以东部(上海)地区、中部(北京)地区、西部(西安)地区水产品消费为研究对象,通过开展实地调研获取一手数据,运用数理统计方法、建立计量模型,对不同区域居民水产品消费水平和消费特征进行了研究,本文分为4个部分六章进行了分析:第一部分是基础部分,包括第一章和第二章,介绍了研究目的与研究意义、国内外研究现状、研究内容、方法以及数据来源按,最后指出本研究的创新之处以及不足的地方,通过不同区域间水产品消费进行对比分析,总结不同区域消费水平的差异以及影响因素。与此同时,概述了水产品消费的相关理论以及影响消费水平和消费行为的因素,最后界定了研究区域,以及在本文的研究中为什么把东部城市划分在中部地区研究。第二部分包括文章的第三章、第四章,描述了全国、东部地区、中部地区、西部地区水产品生产、消费概况,为下文提供背景分析,发现虽然全国水产品在近十年的产量都在递增,但不同区域水产品产量差异非常明显,随后基于消费经济学理论,结合调研数据着重比较分析了不同区域水产品消费形式、消费量、消费变动,通过灰色预测模型对三地区未来水产品消费进行了预测,通过对比分析发现东部、中部、西部居民人均水产品消费性支出在今后的几年时间里将保持稳定增长,不同地区虽然消费水平不同,但随着居民收入水平的不断提高,水产品占居民消费性支持的比例不断提升,居民饮水结构不断优化,在六七年以后,西部地区居民人均水产品消费性支出将首次超过中部地区。第三部分是第五章,运用数理统计方法,结合调研数据分析东部(上海)地区、中部(北京)地区、西部(西安)地区水产品消费特征,发现在消费的主要种类上,三地区的都是以以鱼类和虾蟹为主,而东部地区对虾的消费最多,藻类的消费地域差异也较为明显,中西部地区明显高于东部地区;在水产品形态上,三个地区居民水产品消费的主要形态为冰冻或冰鲜的原条产品和“三去”的初级加工水产品,鱼糜制品在中部和西部受到一些消费者的喜爱;在消费场所上,居家消费水产品是三地区居民的主要消费场所,其次是酒店消费,但有少量居民在食堂消费水产品;在东部地区,居民对水产品的养殖环境有较高要求,喜欢吃海水养殖和捕捞的水产品,中西部地区则要求不明显;在水产品购买场所中,集贸市场是北三地区居民购买水产品的主要场所,其次是水产品专卖店,也有部分居民选择超市购买,近年来少部分居民选择网上订购。最后研究了不同区域居民收入水平、消费习惯和偏好、替代副食品的价格水平和城镇化水平对水产品消费的影响。第四部分是第六章,针对以上各章的分析,提出在促进中国城镇居民水产品消费方面应因地制宜,不同地区采取不同措施,东部地区要东部地区建立健全水产品准入制度,西部地区要提高居民收入水平和完善基础设施并进,中部地区需应加快城市化进程的同时大力做好水产品宣传工作。
[Abstract]:Aquatic products gradually by people deeply understanding because of its nutritional value, making the market and consumer groups gradually expand, demand is increasing year by year, the development of aquaculture related peoples diet and nutrition level, there are about 1 billion of the population are dependent on animal protein intake to aquatic products needed for life, in aquatic products China has accounted for about 11% of the family's diet structure, China's vast natural resources in different regions, there are obvious differences in the level of economic development and cultural practices, and thus lead to regional differences in aquatic products consumption level and consumption characteristics, from the regional perspective, in the eastern. In the central region, the production situation of aquatic products in the western region, based on comparative analysis of the consumption of aquatic products, the consumption level of different regional residents and including the purchase intention, The type of consumer, consumption patterns, consumer sites, different places to buy consumer characteristics are analyzed, and based on this, puts forward the countermeasures to improve the aquatic products consumption level of residents of different regions. The eastern region (Shanghai), central (Beijing area), West (Xi'an) consumption area aquatic products as the research object, obtain first-hand data through field research, using statistical method, established the econometric model for different regional residents aquatic products consumption level and consumption characteristics were studied, analyzed in this paper is divided into 4 parts and six chapters: the first part is the basic part, including the first chapter and the second chapter. The second part includes the article the third chapter, the fourth chapter describes the national, eastern region, central region, western region aquatic products production and consumption situation, provide the background for the following analysis, found that although the national aquatic products in nearly ten years of production are increasing, but the output of aquatic products in different regions are very obvious differences, then based on the theory of consumption economics changes combined with the research data mainly compares and analyses the different forms of consumption, regional water consumption, the consumption of products, through the grey forecasting model of the three areas of future consumption of aquatic products Were predicted by comparison of Eastern, central and Western spending per capita consumption of aquatic products of residents will maintain steady growth in the next few years, although the level of consumption in different regions is different, but with the increasing levels of income, the consumption of aquatic products accounted for the rising proportion of support, the residents of drinking water structure optimization, in six or seven years, spending per capita consumption of aquatic products of residents in the western region will be more than the central region for the first time. The third part is the fifth chapter, using the method of mathematical statistics, combining the survey data analysis of Eastern (Shanghai) area, the central area (Beijing), West (Xi'an) consumption characteristics of aquatic products found in the area, the main types of consumption on the three areas are based on fish and shrimp, while the eastern region of shrimp consumption, the consumption of algae is also more obvious regional differences, the central and western regions were significantly higher In the eastern region; water in the form of products, mainly in the form of residents' consumption of aquatic products in three areas of ice or ice fresh and original product "three" primary processing of aquatic products, surimi products by some consumers in the middle and western areas; in places of consumption, water consumption is the main consumption of home products three places for area residents, followed by the hotel consumption, but there is a small amount of residents in the canteen consumption of aquatic products; in the eastern region, residents have higher requirements on aquatic products breeding environment, love to eat the sea farming and fishing of aquatic products, the Midwest is not obvious; in aquatic products purchasing place, the market is the main place north area residents to buy water products, followed by water products stores, some residents choose to buy the supermarket, in recent years, a few residents choose to order online. At the end of the water district residents of different income domain Flat, consumption habits and preferences, affect the price level and the level of urbanization on the consumption of aquatic products instead of food.
