青岛市饮食文化旅游资源开发研究

【摘要】:中国饮食文化博大精深、源远流长,在世界上享有很高的声誉。中国人讲饮食,不仅仅是一日三餐,解渴充饥,它蕴含着中国人认识事物、理解事物的哲理,饮食与文化密不可分,饮食文化随着中华文明源远流长五千年。而旅游作为人类更高一层次的享受,是生活需求与生活权力的体现。饮食活动作为旅游活动必不可少的部分,在旅游活动的六大要素“吃、住、行、游、购、娱”当中居于首要位置。饮食不仅可以作为旅游产品中的组成部分,也可以成为旅游产品。旅游业的快速发展,旅游者的需求不仅仅是单纯的观光,更多的人开始追求文化的品味,注重旅游的参与和体验性。饮食文化作为旅游资源,既可以满足旅游者高层次的文化需求,也有利于当地的经济文化发展,这对旅游业的发展有着重要作用。中国素有“烹饪王国”之称,“品尝正宗的中国菜”已成为众多外来游客来华的直接动机;通过品尝中国菜来直接体验和感受中国博大精深的饮食文化也被国外与国内的旅游者追捧。 饮食文化与旅游产业互相融合并且快速发展,在这种背景下,对于青岛这样的旅游城市来讲,怎么认识和评价青岛饮食文化资源,对青岛饮食文化资源开发现状做出理性的分析,提出青岛饮食文化旅游资源开发的原则,开发的策略以及具体饮食文化旅游产品,都是非常有价值的研究课题。把饮食文化资源打造成特色的旅游项目,进一步推动饮食文化资源的可持续健康发展,这具有一定的现实意义与价值。 本文共分六部分:第一部分是绪论,其阐述选题的背景与意义、国内外研究现状、研究的内容与研究方法; 第二部分是饮食资源方面的概述及饮食文化的概念,讲述饮食旅游的作用功能,总结出饮食文化旅游的特征; 第三部分青岛饮食文化旅游资源现状分析,首先介绍了青岛饮食文化构成要素青岛美食资源、青岛酒文化资源和青岛茶文化资源,并在此基础上分析总结出青岛饮食文化旅游的特征; 第四部分对青岛饮食文化旅游资源的开发现状进行了描述和分析,介绍了青岛美食、酒文化、茶文化的开发现状,并对开发中存在的问题进行分析; 第五部分着重阐述青岛饮食文化旅游资源的开发,提出开发的原则,开发的SWOT分析,从整体规划、提升品位、品牌宣传、人才培养等角度提出开发的策略和对打造青岛本帮菜、青岛酒文化资源开发以及青岛茶文化资源开发等具体旅游产品开发的对策; 第六部分是结论和展望。
[Abstract]:Chinese food culture has a long history and enjoys a high reputation in the world. Chinese people not only eat three meals a day to relieve thirst and hunger, but also contain Chinese people to understand things, understand the philosophy of things, diet and culture are inseparable, eating culture goes back to five thousand years with Chinese civilization. As a higher level of enjoyment, tourism is the embodiment of life demand and life power. As an indispensable part of tourism activities, dietary activities occupy the primary position in the six elements of tourism activities: eat, live, travel, buy and entertain. Diet is not only an integral part of tourism products, but also a tourist product. With the rapid development of tourism, the demand of tourists is not only simple sightseeing, but also more people begin to pursue the taste of culture and pay attention to the participation and experience of tourism. As a tourist resource, diet culture can not only meet the high-level cultural needs of tourists, but also benefit the development of local economy and culture, which plays an important role in the development of tourism. China is known as the "cooking kingdom", "taste authentic Chinese food" has become the direct motivation of many foreign tourists to come to China; Through the taste of Chinese food to experience and experience China's profound food culture is also sought after by foreign and domestic tourists. Food culture and tourism industry converge and develop rapidly. Under this background, for a tourist city like Qingdao, how to understand and evaluate the food culture resources in Qingdao? This paper makes a rational analysis of the present situation of the development of food culture resources in Qingdao, and puts forward the principles, strategies and products of the tourism resources of the food culture in Qingdao, all of which are very valuable research topics. It is of practical significance and value to make the dietary cultural resources into a characteristic tourism project to further promote the sustainable and healthy development of the dietary cultural resources. This paper is divided into six parts: the first part is the introduction, which describes the background and significance of the topic, the domestic and foreign research status, research content and research methods; The second part is the overview of dietary resources and the concept of diet culture, the function of diet tourism, summed up the characteristics of food culture tourism; The third part analyzes the present situation of Qingdao food culture tourism resources. Firstly, it introduces Qingdao food resources, Qingdao wine culture resources and Qingdao tea culture resources. On this basis, the characteristics of food culture tourism in Qingdao are analyzed and summarized. The fourth part describes and analyzes the current situation of the development of Qingdao food culture tourism resources, introduces the current situation of the development of Qingdao food, wine culture and tea culture, and analyzes the existing problems in the development. The fifth part focuses on the development of Qingdao food culture tourism resources, puts forward the principles of development, the development of SWOT analysis, from the overall planning, promotion of grade, brand publicity, The author puts forward the development strategy and the countermeasures to the development of the tourism products, such as the development of Qingdao Benbang cuisine, the development of Qingdao wine and cultural resources, and the development of Qingdao tea culture resources. The sixth part is the conclusion and prospect.
