分子光谱法测油脂酸价碘价及过氧化值

【摘要】:酸价、碘价以及过氧化值能够比较直观的表达出油脂的品质好坏,各种检测油脂品质的方法层出不穷,化学方法已经逐渐被淘汰,使用仪器进行油脂检测的方法在近年研究进展比较大,其中红外光谱法都是使用近红外光谱。仍然不能满足快速、大量、简易的油脂样品检测需求。本文先阐述各种方法对油脂样品进行检测酸价、碘价、过氧化值的研究方向及研究进展,以及近红外光谱检测油脂组分的研究进展,本文通过红外光谱的中红外区(4000~200cm-1)对样品进行检测,样品无需前处理,检测速度快,操作简单,准确度高。实验通过红外光谱的中红外区以及紫外光谱检测油脂样品,将所得数据与标准样数据对比,以及通过气相色谱得到的数据以及标准数据做对比,线性拟合得到酸价、碘价及过氧化值的标准曲线,利用该曲线对油脂的酸价、碘价以及过氧化值进行预测,花生油、菜籽油、棕榈油和混合油样4个模型的酸价预测值与滴定法测得的实际酸价之间的线性相关系数R2分别为:0.9691、0.9585、0.7529、0.9072。花生油、菜籽油、及大豆油和花生油的混合油3个模型的碘价预测值与化学滴定法测得的实际碘价之间线性相关系数R2分别为:0.8291、0.7853、0.9198。结果表明,预测得到的数值与实际通过滴定法测得的油脂酸价、碘价以及过氧化值有良好的线性关系。其中碘价的测定采用油脂的CCl4溶液进行红外光谱扫描,打破了以往利用涂膜法测定油脂相关参数的惯例。
[Abstract]:Acid value, iodine value and peroxide value can directly express the quality of oil. Various methods for detecting the quality of oil have emerged one after another, and chemical methods have been gradually eliminated. In recent years, the method of oil detection by instrument has made great progress, among which the near infrared spectrum is used in infrared spectroscopy. Still unable to meet the rapid, large quantity, simple oil sample detection requirements. This paper first describes the research direction and progress of various methods for the determination of acid value, iodine value, peroxide value of oil samples, and the research progress of near-infrared spectroscopy for the determination of oil components. In this paper, the samples were detected in the middle infrared region (200cm-1) of IR spectrum. The samples need no pretreatment, the detection speed is fast, the operation is simple, and the accuracy is high. In the experiment, the oil samples were detected in the middle infrared region and ultraviolet spectrum of the infrared spectrum. The acid value was obtained by linear fitting by comparing the obtained data with the standard sample data and the gas chromatographic data and the standard data. The standard curve of iodine value and peroxide value, using this curve to predict acid value, iodine value and peroxide value of oil, peanut oil, rapeseed oil, The linear correlation coefficient R2 between the predicted value of acid price of palm oil and mixed oil sample and the actual acid value measured by titration is 0. 0. 9691 ~ 0. 958 5 ~ 0. 7529 and 0. 9072, respectively. The linear correlation coefficient between the predicted iodine price of peanut oil, rapeseed oil, soybean oil and peanut oil mixed oil and the actual iodine price determined by chemical titration is R ~ 2 = 0.7850.9198, respectively. The results show that there is a good linear relationship between the predicted value and the acid value, iodine value and peroxide value of oil and fat measured by titration. The iodine valence was determined by CCl4 solution of oil and fat by infrared spectrum scanning, which broke the usual practice of using coating method to determine the parameters of oil and fat.
