食品用防油纸中有害物的迁移分析

【摘要】:食品包装防油纸是一种用于防止食品中油脂透过的纸张。而防油纸中含有的全氟辛酸为其主要的有害物质,全氟化合物是一种新型的持久性污染物,毒理学研究证明,此类物质具有导致器官损伤、神经行为缺陷、生殖发育障碍、脂代谢紊乱以及各种激素分泌失调等多种症状的毒性。防油纸中的全氟辛酸存在迁移到油脂类食品的可能性,给人们身体健康带来危害。本文采用气相色谱质谱联用技术(GC-MS)检测防油纸中全氟辛酸的残留以及迁移量。首先通过对比固相萃取、液-液萃取、超声提取、索式提取和加速溶剂萃取几种样品提取方法确定了选用超声提取法,并通过对比确定了提取溶剂、提取温度。然后进行衍生化方式的确定,最终确定衍生温度为60℃,衍生时间为60分钟,并在衍生过程中加入氢氧化钠溶液。之后,优化仪器参数,确定用内标法进行定量,检测几种防油纸样品中的全氟辛酸残留。涂布防油纸,检测其防油等级,并分别检测其全氟辛酸的残留。选择一种等级的涂布防油纸,测量其在不同温度下向油脂类食品模拟物的迁移水平,并做出它的迁移模型。结果表明,测得两种普通防油纸样品中全氟辛酸含量分别为0.6μg/kg和1.86μg/kg,爆米花桶样品中全氟辛酸含量为2.02μg/kg,烧烤油纸和汉堡纸及小吃包装纸袋中没有检测到全氟辛酸。对涂布防油纸进行残留检测,防油等级为6级的防油纸全氟辛酸的含量为0.0091μg/cm2,防油等级为7级的防油纸全氟辛酸的含量为0.0241μg/cm2,防油等级为8级的防油纸全氟辛酸的含量为0.0281μg/cm2,均没有超过国家对于全氟添加剂使用国家标准中的限值。对于含氟涂层防油纸,随着防油等级的增高,其所含全氟辛酸的量也增加的更多。对涂布防油纸进行迁移实验,在20℃时,全氟辛酸的迁移量为0.0140μg/cm2-0.0275μg/cm2;在70℃时,全氟辛酸的迁移量为0.0093 μg/cm2-0.0213μg/cm2; 在 121℃时,全氟辛酸的迁移量为0.0039μg/cm2-0.0232μg/cm2。借助软件对实验数据进行回归分析,证明在20℃时,全氟辛酸向橄榄油中的迁移规律符合Boltzmann;在70℃时,全氟辛酸向橄榄油中的迁移规律符合指数函数。
