TQ乳制品公司食品安全危机管理优化的研究

【摘要】:随着经济社会的不断发展,处于经济转轨和社会转型时期的中国,难以避免地因为各类矛盾而引发不同程度的危机事件。在各类危机事件中,食品安全危机事件不论从爆发的频率和人们的关注度都位居前列。近年来爆发的食品安全危机事件如三鹿的“三聚氰胺”事件,肯德基的“苏丹红”事件,双汇的“瘦肉精”事件,光明的“回炉奶”事件等等,无一不是备受媒体和公众关注的社会热点。食品安全无小事,它不仅关系到人们的身体健康和社会的和谐稳定,还关系到食品企业品牌形象和今后的发展。在这样的社会背景下,进行企业食品安全危机管理的研究很有必要。本论文以TQ乳制品公司为研究对象,以危机管理相关理论作为指导,通过企业实地考察、调研、查阅相关资料等方式,了解了公司食品安全危机管理的现状,从目标、主体、方法、流程四个方面分析了公司在食品安全危机管理方面存在的问题,并运用SMART模型、组织架构理论、关键点控制法等方法和模型对以上四个方面进行了优化和改进。最后从企业文化、奖惩措施、人才培养三个方面,对公司的食品安全管理提供了保障的措施。通过研究,在理论上丰富了企业危机管理和食品安全危机管理体系的内容,对于今后相关领域的研究有一定的借鉴作用,实践上为TQ乳制品公司食品安全危机管理方面提供了切实可行的优化方案,对于企业提升相关领域的管理水平有一定的帮助。
[Abstract]:With the continuous development of economy and society, China is in the period of economic transition and social transformation, which inevitably leads to various degree of crisis events because of various contradictions.Among all kinds of crisis events, food safety crisis is in the forefront in terms of frequency of outbreak and people's attention.Recent food safety crisis events such as the "melamine" incident of Sanlu, the "Sudan Red" incident of KFC, the "lean meat essence" incident of Shuanghui, the bright "reboiler milk" incident, etc.None is a social hot spot that has attracted the attention of the media and the public.Food safety is not only related to people's physical health and social harmony and stability, but also related to the brand image and future development of food enterprises.Under such social background, it is necessary to study the crisis management of enterprise food safety.This paper takes TQ dairy company as the research object, takes the crisis management theory as the instruction, through the enterprise field inspection, the investigation, the related material and so on, has understood the company food safety crisis management present situation, from the goal, the main body,Methods: the problems in food safety crisis management of the company were analyzed in four aspects, and the above four aspects were optimized and improved by using SMART model, organization structure theory, key point control method and other methods and models.Finally, from three aspects of corporate culture, rewards and punishment measures, talent training, the company's food safety management measures to provide security.Through the research, it enriches the contents of enterprise crisis management and food safety crisis management system in theory, and has certain reference function for future research in related fields.In practice, it provides a feasible optimization scheme for the food safety crisis management of TQ dairy company, which is helpful for enterprises to improve the management level in related fields.
