【摘要】：中国素以农业立国，一部中国古代史，也可以说是一部中国农业发展史。农业不仅实现了人类的定居，也正是有了农业，才有了文字，从而产生了博大精深中华文明。研究农业自然离不开对农业工具的研究。石磨盘、石磨棒虽然是随着原始采集渔猎经济而出现的，但它却为农业的产生发展打下了基础，因而与农业有着一定的渊源。因此对石磨盘、石磨盘的起源与历史发展进行系统研究，不仅是了解中国古代农业科技发展的重要路径，也能对古代采集和种植种类的分布及栽培有所了解。这对于确定个原始文化的特征、研究不同文化的经济类型以及了解其生活习俗有特别意义。石磨盘、石磨棒作为先民生产和生活的工具，也为我们解读中国古代饮食结构与饮食文化变迁另辟他途，为我们研究中国饮食文化提供一种新的途径和方式。首先，本文立足各种历史文献和前人研究资料，对石磨盘、石磨棒进行了定义，了解石磨盘的起源。认为石磨盘、石磨棒为旧石器晚期和新时期时代早期先民普遍使用的日常工具，它们是随着原始采集经济的出现而被先民发明出来的。石磨盘、石磨棒不仅能反映原始采集经济，而且还体现了一定的男女分工。它们是妇女的劳动工具。其次，以石磨盘的外部形态特点、使用方式以及制作材料等对它进行了分类。在对石磨盘进行详细分类的基础上，探讨了石磨盘在不同时代下的用途。由于原始社会生产力低下，自然条件恶劣，任何一种先民创造出来的工具都是一物多用的。正如石磨盘、石磨棒，它们的用途也是多样的，并且随着时间的推移而不断改变。从最开始的植物果实的加工到谷物加工，纺织业上的运用到制陶业上的研磨颜料，先民在日常生活中对石磨盘、石磨棒可谓物尽其用。但是，随着社会生产力的提高，石磨盘、石磨棒的这些用途被逐渐的一一分离出来，并分别为那些更高效更轻便的专业工具所代替，最后，石磨盘、石磨棒被农业民族淘汰于历史的长河里，彻底退出历史舞台。本文认为工具的外表特征或具体名称和工具的用途可以因为地域原因而有所差异，再加上文化产生的时间差距，导致了各地出土石磨盘、石磨棒的形态各异是必然的。而裴李岗文化、磁山文化和后李文化出现的制作相对精美的石磨盘、石磨棒，除了反映这些文化影响下的先民审美观点的独特和当时先民粮食充足外，并不一定可以说这些文明时期农业的发达。再次，对历史时期内石磨盘、石磨棒的发展变迁作了比较详细的梳理。本文认为杵臼是代替石磨盘、石磨棒进行谷物加工的工具，而杵臼又随着时间的推移，向两个更专业化的方向发展：一是专业脱壳，如碓、碾、砻；一是专业磨粉，石转磨。这些工具都先后的经历了动力的改革，从人力到蓄力再到水力，甚至是风力。最后，，本文认同北方游牧民族马鞍形石磨盘可以用于磨粉的功能，并认为正是这种功能让游牧民族制作出了汉唐时期风靡几个朝代的胡食之一——胡饼。游牧民族和中原农业民族通过战争、贸易、互市等交流形式，使得胡饼在中原农业民族得以广泛传播和推广，并通过农业民族不断的创新而本土化、特色化。胡饼的广泛传播也得是胡饼的制作原料——小麦，终于在唐中期时一改过去在人们粮食结构里的中游地位，成为北方最主要的粮食作物，并一直保持到现在。
[Abstract]:This paper studies the origin and history of ancient China ' s ancient agricultural science and technology . It is not only an important way to understand the development of ancient agricultural science and technology , but also to understand the distribution and cultivation of ancient harvest and planting species .

Based on the detailed classification of stone grinding discs , the use of stone grinding discs in different times is discussed . As the productivity of the original society is low and natural conditions are bad , the use of stone grinding rods is gradually separated out , and the stone grinding discs and stone grinding rods are replaced by the more efficient and lighter professional tools .

The author thinks that the appearance characteristics of the tool or the application of the specific name and tool can be different because of the geographical reasons , and the time difference between the culture and the stone grinding stick is inevitable .

In this paper , the development of stone grinding disc and stone grinding rod in historical period is described in detail . It is believed that the mortar is a tool for replacing stone grinding disc and stone grinding rod for grain processing , and the ball mortar develops into two more specialized directions over time : Firstly , it is a professional deshell , such as grinding , grinding and grinding ;
One is professional milling , stone grinding . These tools have gone through power reform , from manpower to power to hydraulic , even wind .

At last , it is recognized that the saddle - shaped stone grinding disc of the northern nomadic nationality can be used for the function of grinding , and it is believed that it is the function of the nomadic people to produce one of the Hu foods which has been popular in the Han and Tang dynasties . The nomadic peoples and the Central Plains agricultural nations have been widely disseminated and promoted through wars , trade , mutual cities and the like .
