饮食考古初论

【摘要】：考古学的任务在于根据古代人类通过各种活动遗留下来的物质资料,以研究人类古代社会的历史。实物资料包括各种遗迹和遗物。一直以来考古学专注于研究器物,尤其是容器,而对于这些器物后面所反映的古人如何使用这些器物甚少关注。民以食为天,在物质不丰裕的古代,吃饭问题是远古人类所面临的最大问题。通过考古所发掘出来的器物还原古代人的饮食方式,就是考古学中一个重要的问题。 本文前言部分首先讨论了饮食文化在中国文化的重要地位,回顾张光直、王仁湘等前辈的已有的饮食考古方面研究成果。第一章论述人类从茹毛饮血到熟食时代。第二章论述农业的产生和原始人的食物种类。第三章论述古人的烹饪方式和进食工具。第四章论述古代的鼎食传统和由分餐向会食的转变。第五章浅论饮食与礼的关系。最后作出结论。 饮食考古作为考古学的的一个分支,研究史前饮食文化也是探讨中国文明起源的一个重要的途径。饮食考古应当引起学者们的重视。
[Abstract]:The task of archaeology is to study the history of ancient human society according to the material data left over by ancient people through various activities. Physical information includes various relics and relics. Archaeology has focused on objects, especially containers, but little attention has been paid to how the ancients used them behind them. The problem of eating was the biggest problem faced by ancient people. It is an important problem in archaeology to restore ancient people's diet through archeological artifacts. The preface of this paper first discusses the important position of diet culture in Chinese culture, and reviews the existing research achievements in food archaeology of Zhang Guangzhi and Wang Renxiang. The first chapter discusses the age of human beings from raw hair and blood to cooked food. The second chapter discusses the origin of agriculture and the food species of primitive people. The third chapter discusses the ancient cooking style and eating tools. The fourth chapter discusses the ancient tradition of tripod food and the transition from divided meal to eating. The fifth chapter discusses the relationship between diet and ritual. Finally draw a conclusion. Food archaeology as a branch of archaeology, the study of prehistoric diet culture is also an important way to explore the origin of Chinese civilization. Food archaeology should attract the attention of scholars.
