【摘要】：川菜作为中国著名的地方风味流派,是四川地区原住民与外来移民、流动人口共同创造的成果。四川从古至今多次大规模的人口迁移与流动,不仅促进了川菜经营品种的创新和川菜市场业态的增加,而且促进了川菜烹饪人才的培养,极大地推动了川菜的持续发展和餐饮市场的繁荣兴盛。
[Abstract]:Sichuan cuisine is a famous local flavor school in China. Many large-scale population migrations and movements in Sichuan from ancient to present have not only promoted the innovation of Sichuan cuisine operating variety and the increase of Sichuan cuisine market, but also promoted the cultivation of Sichuan cuisine culinary talents. Greatly promoted the sustained development of Sichuan cuisine and the prosperity of the catering market.
