朝鲜族女性在民族饮食业发展中的作用

【摘要】:在中国社会的市场化转型过程中,朝鲜族的民族饮食业也实现了快速增长,朝鲜族饮食企业已经十分注重顾客的需求与健康、品牌的塑造、企业规模的扩大。通过连锁经营和特许经营等多种方式,朝鲜族民族饮食业正从延边地区积极进军国内大市场。在传统的性别角色分工观念下,朝鲜族女性熟悉饮食加工,且饮食行业的入门较容易,所以,在市场经济条件下饮食业成为朝鲜族女性就业并获得职场成功的主要行业之一。但是,一直以来朝鲜族女性在民族饮食业以及饮食文化发展中的地位与作用没有得到学界的关注和认可。基于这一问题意识,本论文采用文献研究、参与观察、深层访谈等民族学的研究方法,努力发掘从事饮食业的延边朝鲜族女性经营者的业绩资料,要以第一手资料来论证延边朝鲜族女性在民族饮食业发展中的地位与积极作用。本论文共分四章。第一章是绪论部分,主要写了选题背景和研究目的、文献综述、研究方法。第二章是中国朝鲜族民族饮食业发展概况,包括饮食业在不同发展阶段的不同的发展特点。第三章是本文的重点也是创新点,从四个方面论述了朝鲜族女性在民族饮食业中的地位与作用:朝鲜族饮食业女经营者们在饮食项目开发和管理方面发挥了创新作用;在延边民族饮食业具有代表性的女企业家发挥表率作用,成为年轻一代饮食业经营者的榜样;朝鲜族女性被评为民族饮食类各级非物质文化遗产项目传承人,发挥着民族饮食文化的传承作用;朝鲜族女性主动成立延边朝鲜族传统饮食协会等各种行业协会、建设各种饮食教学和科研平台,教育和培训饮食从业者,发挥强大的组织作用。第四章是结论部分。
[Abstract]:In the process of the market-oriented transformation of Chinese society, the ethnic dietetic industry of the Korean nationality has also achieved rapid growth. The Korean dietetic enterprises have paid great attention to the demand and health of the customers, the molding of the brand, the expansion of the scale of the enterprises. The Korean ethnic food industry is actively advancing from the Yanbian region through various ways such as chain operation and franchise. Under the traditional gender role division concept, the Korean women are familiar with the food processing, and the introduction of the catering industry is easy. So, under the market economy, the catering industry has become one of the main industries for Korean women to obtain employment and succeed in the workplace. However, the Korean women have always been in the national diet industry and drinking. The status and function of the development of food culture has not received the attention and approval of the academic community. Based on this problem consciousness, this paper uses literature research, participation in observation, deep interview and other ethnological research methods, and tries to explore the performance data of the Korean women operators engaged in the catering industry in Yanbian, and to demonstrate Yanbian Korea with first-hand information. The status and active role of ethnic women in the development of national dietary industry. This paper is divided into four chapters. The first chapter is the introduction part, which mainly describes the background and purpose of the topic, literature review and research methods. The second chapter is the development of the Chinese Korean ethnic diet industry, including the different development characteristics of the catering industry at different stages of development. Third chapters It is the focus of this article and the innovation point. From four aspects, the status and function of the Korean women in the national diet industry are discussed. The Korean dietetic women operators have played an innovative role in the development and management of the diet project, and the representative female entrepreneurs in the ethnic catering industry in Yanbian play an exemplary role and become a young generation of drinking. The Korean women have been named as the inheritors of the non-material cultural heritage projects at all levels of the national diet, playing the inheritance of the national diet culture, and the Korean women actively set up various trade associations, such as the Yanbian Korean traditional Dietetic Association, and build various drinking and food teaching and scientific research platforms, and the education and training of catering trade. The fourth chapter is the conclusion.
