周代饮食文化研究

【摘要】: 本文系统考察了周代的饮食文化。文章首先对周代不同社会阶层的饮食内容进行了论述,然后对周代饮食器具的使用情况进行了考证。在周代的饮食烹饪一章中,本文详细阐述了酒浆等饮品、主食、副食的制作方法,并对周代的饮食调味品、烹饪工具和烹饪特点进行了说明。另外,文章对周代饮食的来源途径和储存方式也有所考察。在周代的饮食风俗一章,本文从食人现象、周人每日餐数、周人的用餐方式、进食之礼、战国食客现象、周人的尊长敬老的饮食习俗、胎教饮食习俗、寒食风俗八个方面进行了论述。对于周代的饮食制度,则包括传食制度、食官制度和周礼中,主要是吉、凶、军、宾、嘉五礼中的各种饮食礼制的系统研究,以及周代饮食制度的特点、功用和衰落等几个方面的考察。其后本文又对周代的饮食经济进行了说明。由于经济的发展和旧有政治体系的瓦解,在战国时期,人们的思想日益活跃,对饮食也具有丰富的思想认识,对于这些思想认识,本文从七个方面进行了论述,包括迎合思想、基本欲求、道德要求、养生思想、五行思想、禁忌思想、孝道思想等等。最后,本文从饮食内容的差异、饮食器具的差异和共通性、地方物产的差异、饮食礼仪的差异和饮食烹饪特点的差异五个方面对周代饮食文化的地域性区别进行了说明。
[Abstract]:This paper systematically examines the diet culture of Zhou Dynasty. This paper first discusses the dietary contents of different social strata in Zhou Dynasty, and then studies the use of dietary utensils in Zhou Dynasty. In the chapter of Dietary Cooking in Zhou Dynasty, the methods of making alcoholic drinks, staple foods and non-staple foods are described in detail, and the dietary condiments, cooking tools and cooking characteristics of Zhou Dynasty are also explained. In addition, the article also investigated the source of the Zhou Dynasty diet and the way of storage. In the chapter of Zhou Dynasty's eating custom, this article from the phenomenon of cannibalism, the number of Zhou people's daily meals, the Zhou people's dining style, the eating ceremony, the warring States period diner phenomenon, the Zhou people's respect for the elder's eating custom, the fetal education diet custom, the Zhou people's respect for the old people's eating custom, Eight aspects of cold food custom are discussed. As for the diet system of the Zhou Dynasty, it includes the transmission system, the official system of eating, and the systematic study of various dietary etiquette systems in the five etiquette of Zhou Dynasty, which are mainly auspicious, fierce, military, guest and Jia, as well as the characteristics of the Zhou Dynasty's diet system. Function and decline and other aspects of the investigation. After that, this article also explained the diet economy of Zhou Dynasty. As a result of the economic development and the disintegration of the old political system, during the warring States period, people's thoughts became more and more active, and they also had rich ideological knowledge of diet. For these ideas, this paper discusses these ideas from seven aspects, including catering to the ideas. Basic desire, moral requirement, health care thought, five elements thought, taboo thought, filial piety thought and so on. Finally, this paper explains the regional differences of diet culture in Zhou Dynasty from five aspects: the difference of diet content, the difference and commonality of dietary utensils, the difference of local products, the difference of dietary etiquette and the difference of dietary cooking characteristics.
