可食性明胶—壳聚糖复合膜的制备及性能研究

【摘要】: 明胶是胶原蛋白经部分水解和变性而制得,是氨基酸以肽键连接起来的蛋白质大分子化合物,含有大量的甘氨酸、脯氨酸、羟基脯氨酸以及天冬氨酸和谷氨酸,分子中含有大量羧基、羟基等活性基团;壳聚糖是一种阳离子聚合物,分子中含有大量氨基、羟基等活性基团;两种高聚物间很容易产生氢键、离子键等作用。 明胶-壳聚糖复合膜是一种“绿色包装”,是现代包装技术研究的重要方向。全世界每年扔掉和包装材料有关的固体废弃物在50亿吨以上,其中30%是塑料废弃物;可食性膜的研究对于解决因食品包装废弃物而造成的环境污染问题具有重要意义。 对高分子材料的研究表明,高分子材料制品的结构和性能不仅与高分子材料的化学结构和分子量等密切相关,处理条件与方法对其性能也有较大的影响。明胶和壳聚糖均是高分子物质,明胶-壳聚糖复合膜的性能和结构受到诸多因素的影响,研究明胶-壳聚糖复合膜的结构和性能的影响因素对于该膜的加工和利用具有重要的理论和实践意义。 本文系统研究了明胶-壳聚糖复合膜的成膜特性,通过单因素试验研究了明胶与壳聚糖的配比、膜液pH值、干燥温度、加热干燥时间、增塑剂种类及用量等单因子对膜性能的影响;对影响复合膜性能的主要因子进行正交试验,确定出最佳的生产工艺参数:明胶与壳聚糖的配比为1.5:1,膜液pH值为4.0,干燥温度为50℃,加热干燥时间为5h,最佳增塑剂为甘油,其用量为0.5g/100mL。
[Abstract]:Gelatin is a protein macromolecular compound composed of amino acids linked by peptide bonds, which is prepared by partial hydrolysis and denaturation of collagen, which contains a large number of glycine, proline, hydroxyproline, aspartic acid and glutamic acid, and contains a large number of carboxy, hydroxyl and other active groups. Chitosan is a cationic polymer, which contains a large number of amino, hydroxyl and other active groups. It is easy to produce hydrogen bond, ion bond and so on between the two kinds of polymer. Gelatin-chitosan composite membrane is a kind of green packaging, which is an important research direction of modern packaging technology. More than 5 billion tons of solid waste related to packaging materials are thrown away every year in the world, of which 30 per cent are plastic waste. The study of edible film is of great significance to solve the problem of environmental pollution caused by food packaging waste. The study of polymer materials shows that the structure and properties of polymer materials are not only closely related to the chemical structure and molecular weight of polymer materials, but also have great influence on the properties of polymer materials. Gelatin and chitosan are both polymer materials. The properties and structure of gelatin-chitosan composite membrane are affected by many factors. It is of great theoretical and practical significance to study the structure and properties of gelatin-chitosan composite membrane for the processing and utilization of the membrane. In this paper, the film forming characteristics of gelatin-chitosan composite membrane were studied systematically. The effects of the ratio of gelatin to chitosan, pH value of membrane solution, drying temperature, heating drying time, type and dosage of plasticizer on the properties of the membrane were studied by single factor test. The main factors affecting the properties of the composite membrane were orthogonal test, and the optimum production parameters were determined as follows: the ratio of gelatin to chitosan was 1.5 脳 1, the pH value of membrane solution was 4.0, the drying temperature was 50 鈩,
