武汉市动物性食品中双酚A的污染现状调查及人群暴露风险评估

【摘要】:目的:检测武汉市区居民经常食用的动物性食品中双酚A(BPA)含量,调查当地居民的膳食结构,了解膳食中动物性食品的比例,进而推算出该类途径双酚A的暴露量,评估当地居民由动物性食品暴露双酚A所带来的健康风险。 材料和方法:随机选取该市3个区的6个超市及菜市场,选取其市场上常见的动物性食品13种,共采样品78份,用液质检测仪(LC-MS/MS)测定样品中BPA的含量,严格控制样品预处理和分析过程的质量,方法的检出限(LOD)为0.5ng/g。随机选取武汉市居民(2岁及以上者),180户,共计338人作为膳食调查的对象,以三天24小时正餐回顾询问统计,分析膳食调查结果计算出每日该类食物的人均摄入水平。以样品中的BPA的含量和膳食调查的数据,计算出平均暴露量,结合当前BPA摄入的危害限值的相关研究资料推算当地居民通过摄入动物性食品所暴露BPA的风险水平。 结果:(1)BPA在动物性食品中含量的范围在0.0到12ng/g之间。其中牛肉的平均检测值较高(8.92±2.21ng/g),鸡蛋中的含量最低(1.44±1.14ng/g)。各种鱼虾类的检出值在1.40到5.75ng/g之间。(2)通过对武汉市居民膳食调查结果的分析,该区居民人均动物性食品的摄入量为277.48g/d,占整个每日膳食摄入的23%,其中畜肉类(38%)和水产类(33%)的比重较大。(3)通过动物性食品暴露的BPA的总量为682.5ng,人均摄入水平(AD)I为11.38ng/kgbw/day。 结论:BPA在武汉市场上所售的大多数动物性食品中均有微量检出。动物性食品中的BPA暴露量主要是由畜肉类(48%)和水产类(36%)贡献的。经动物性食品暴露的BPA量,,远低于目前国际的限量标准(50μg/gbw/day),通过摄入该市市场上的动物性食品尚不会对居民的健康产生不利影响。
[Abstract]:Objective: to detect the content of bisphenol A (BPA) in animal food which is often consumed by residents in Wuhan, investigate the dietary structure of local residents and understand the proportion of animal food in the diet. The exposure to bisphenol A (BPA) via this pathway was calculated to assess the health risks of local residents exposed to bisphenol A in animal foods. Materials and methods: a total of 78 samples were collected from 6 supermarkets and vegetable markets in 3 districts of the city. The content of BPA in the sample was determined by LC-MS / MS, and the quality of sample pretreatment and analysis was strictly controlled. Methods the detection limit (LOD) was 0.5 ng / g. 180 individuals aged 2 years and above in Wuhan were randomly selected and 338 people were selected as the subjects of dietary survey.
