三亚市售海白中副溶血性弧菌半定量风险评估

【摘要】:对海白中副溶血性弧菌(Vibrio parahaemolyticus,简称Vp)做半定量风险评估,包括危害识别、污染检测、居民膳食调查及Risk ranger半定量风险评估。膳食调查采用食物频率法,以问卷的方式得到三亚居民食用海白的比例为80%及食用频率为1月1次;污染检测主要3月、4月份期间从三亚第一市场和荔枝沟市场取样,采用GB/T 4789.7-2008法对样品进行检测,检出率为100%并得到两个市场的平均污染量分别为1.65 log10MPN/g,2.63log10MPN/g;最终用Risk ranger得到三亚市售海白的副溶血性弧菌膳食风险为高风险(风险指数为51),三亚海白消费者感染副溶血性弧菌胃肠炎的概率为2.96×10-6(人·d)-1;每年消费污染了副溶血性弧菌的海白所引发的病例数约为740.5人。
[Abstract]:The semi-quantitative risk assessment of Vibrio parahaemolyticus (Vp), including hazard identification, pollution detection, dietary survey and Risk ranger semi-quantitative risk assessment, was performed on Vibrio parahaemolyticus. The proportion of sea white consumed by Sanya residents was 80% and the edible frequency was 80% times by questionnaire, and the pollution detection was mainly from the first market of Sanya and the market of litchi ditch in March and April, and the samples were detected by GB/T 4789.7-2008 method. The detection rate was 100% and the average pollution volume in the two markets was 1.65 log10 MPN / g 2.63 log10 MPN / g. Finally, the dietary risk of Vibrio parahaemolyticus sold in Sanya market was high (the risk index was 51g, the risk index was 51g, and the consumers of Sanya Haibai were infected with parahaemolysis). The probability of vibrio gastroenteritis was 2.96 脳 10 ~ (-6) (human 路dl ~ (-1)), and the number of cases caused by the consumption of vibrio parahaemolyticus was about 740.5 per year.
