【摘要】：目的了解上海市餐饮具集中消毒单位卫生管理状况,为加强监管提供参考。方法通过现场调查和消毒效果检测方法,对上海市某区管辖的8家拥有经营资质的餐饮具集中消毒企业卫生状况进行调查。结果所调查餐饮具消毒企业清洗消毒区、包装区卫生合格率分别为78.2%和85.7%。此类企业的从业人员均没有专业学历,50%以上人员没有健康合格证。8家餐饮具集中消毒企业卫生设施和管理工作水平较低,消毒操作均不够规范。每个企业抽检的消毒后餐饮具均符合消毒要求。结论所调查的餐饮具集中消毒企业卫生管理不规范,卫生质量较差,应加强监督监测。
[Abstract]:Objective to understand the sanitary management situation of centralized disinfection units in Shanghai, and to provide a reference for strengthening supervision. A survey was conducted on the hygiene status of 8 centralized disinfection enterprises with managerial qualifications under the jurisdiction of a certain district of Shanghai. The qualified rate of hygiene in packaging area was 78.2% and 85.7 respectively. The level of sanitary facilities and management of such enterprises was lower than 50% of the employees without professional education. The disinfection operation was not standard enough. The disinfected food and beverage utensils of each enterprise met the requirements of disinfection. Conclusion the hygienic management of centralized disinfection enterprises is not standardized and the hygiene quality is poor, so the supervision and monitoring should be strengthened.
