北京市朝阳区市售食用菌中重金属污染状况及分析

【摘要】:目的了解北京市朝阳区市售食用菌中铅、镉、砷、汞、铬及镍6种元素的含量水平,并评价其食用安全性。方法从8个市场采集了9种新鲜食用菌和5种干制食用菌,共计94份样品,采用微波消解-电感耦合等离子体质谱法对样品中的铅、镉等6种元素的含量进行测定。结果鲜食用菌中6种元素的平均含量依次为铅镉砷镍铬汞,干食用菌中为铬镍镉铅砷汞,鲜食用菌中铅、镉、砷、汞含量均低于GB 2762—2012的要求,干食用菌中仅个别食用菌中铅、镉、砷、汞含量超标,占干食用菌总量的4.4%,铬、镍的平均含量在鲜食用菌中处于较低水平,在干食用菌中存在较大差异。不同食用菌中元素含量存在较大差异,其变异系数最大值为204.3%。结论北京市朝阳区市售食用菌中铅等元素的含量总体处于较低水平,食用相对安全。
[Abstract]:Objective to investigate the contents of lead, cadmium, arsenic, mercury, chromium and nickel in edible fungi of Chaoyang District, Beijing, and to evaluate their edible safety. Methods 9 fresh edible fungi and 5 dry edible fungi were collected from 8 markets and 94 samples were collected. The contents of lead, cadmium and other elements in the samples were determined by microwave digestion and inductively coupled plasma mass spectrometry (ICP-MS). Results the average contents of six elements in fresh edible fungi were lead, cadmium, nickel, chromium and mercury, while those in dry edible fungi were chromium, nickel, cadmium, lead and mercury, and the contents of lead, cadmium, arsenic and mercury in fresh edible fungi were lower than those in GB2762-2012. The contents of lead, cadmium, arsenic and mercury in only a few edible fungi exceeded the standard, accounting for 4.4% of the total amount of dry edible fungi. The average contents of chromium and nickel in fresh edible fungi were lower than those in fresh edible fungi, and there were great differences in dry edible fungi. The content of elements in different edible fungi was different, and the maximum coefficient of variation was 204.3. Conclusion the contents of lead and other elements in edible fungi in Chaoyang District of Beijing are relatively low and relatively safe to eat.
