小麦面筋蛋白降低血浆同型半胱氨酸水平的研究

【摘要】:目的探讨不同水平下的酪蛋白和小麦面筋蛋白对血浆同型半胱氨酸(Hcy)水平的影响。方法健康Wistar大鼠48只随机分为6组,分别为12.5%、25%、50%酪蛋白组和14.5%、29%、58%小麦面筋蛋白组。大鼠自由进食、饮水,每天称重并记录大鼠进食量。喂养实验饲料14天后处死,采集血液,取肝脏组织,用于测定血浆和肝脏中Hcy、半胱氨酸(Cys)等氨基酸指标以及同型半胱氨酸甜菜碱甲基转移酶(BHMT)和胱硫醚β-合成酶(CBS)等酶学指标。结果小麦面筋蛋白组的大鼠体重增长显著低于酪蛋白组,而在小麦面筋蛋白组随着蛋白含量的提高,大鼠的饲料摄入量明显逐渐减少。小麦面筋蛋白的摄入使血浆Hcy浓度显著低于酪蛋白组,相反血浆Cys的浓度,小麦蛋白组明显高于酪蛋白组。结论小麦面筋蛋白对血浆Hcy水平的影响主要取决于高Cys与低蛋氨酸含量,但是其赖氨酸和苏氨酸含量较低也是不能忽视的影响因素之一。其主要的作用机制是Cys的升高促进了Hcy代谢的酶活性,增加了Hcy的代谢消耗。
[Abstract]:Objective to investigate the effects of casein and wheat gluten on plasma homocysteine (Hcy) levels. Methods Forty-eight healthy Wistar rats were randomly divided into 6 groups, 12.5% casein group and 14.5% wheat gluten group. Rats ate freely, drank water, weighed and recorded their food intake every day. After 14 days of feeding, the rats were killed, blood was collected and liver tissues were taken. The indexes of amino acids such as Hcyl, cysteine methyltransferase (Hcy) and cysteine betaine methyltransferase (BHMT) and cystathionine 尾 -synthase (CBS) were determined. Results the weight gain of the wheat gluten group was significantly lower than that of the casein group, but the diet intake of the wheat gluten group gradually decreased with the increase of protein content. The plasma Hcy concentration was significantly lower in wheat gluten group than that in casein group. On the contrary, the plasma Cys concentration in wheat protein group was significantly higher than that in casein group. Conclusion the effect of wheat gluten on plasma Hcy level mainly depends on the high Cys and low methionine content, but the low lysine and threonine content is one of the factors that can not be ignored. The main mechanism is that the increase of Cys promotes the enzyme activity of Hcy metabolism and increases the metabolic consumption of Hcy.
