市售辣椒粉样品中主要霉菌产毒能力的研究

【摘要】:目的研究市售辣椒粉样品中曲霉、青霉分离株的产毒能力,为食品安全监测提供数据支撑。方法采集成都市农贸市场辣椒粉样本共40份,稀释后倾注孟加拉红培养基培养,挑取霉菌菌落点种察氏培养基,根据菌落特征和镜下特征,鉴定曲霉和青霉;参照SN/T 1035-2011的方法,检测曲霉和青霉分离株的产毒能力。结果共分离到87株曲霉和青霉,优势菌种为黄曲霉和黑曲霉,其在样品中检出率分别为45.00%、40.00%。87株菌有68株产毒,占78.16%,分离株产毒阳性率分别为黑曲霉100.00%、黄曲霉92.86%和青霉85.00%。结论市售辣椒粉样品曲霉、青霉分离株产毒阳性率高,其中以黄曲霉及黑曲霉菌株产毒能力最为突出,提示样品受真菌毒素,特别是黄曲霉毒素和赭曲霉毒素污染风险较高。
[Abstract]:Objective to study the virulence of Aspergillus and Penicillium isolates from pepper powder samples and to provide data support for food safety monitoring. Methods A total of 40 samples of pepper powder were collected from the farmers' market in Chengdu, and then diluted with Bengal red culture medium, and the colony point of mycetes was selected to identify Aspergillus and penicillium according to the characteristics of colony and under microscope, and the method of SNR / T 1035-2011 was used to identify Aspergillus and penicillium. The virulence of Aspergillus and Penicillium isolates were determined. Results A total of 87 strains of Aspergillus and Penicillium were isolated. The dominant strains were Aspergillus flavus and Aspergillus Niger. The positive rates of Aspergillus Niger, Aspergillus flavus and Penicillium were 45.00%, 92.86% and 85.00%, respectively. Conclusion the positive rate of Aspergillus and penicillium isolates on the market is high, and the strains of Aspergillus Niger and aflatoxin are the most prominent, suggesting that the samples are at high risk of contamination by mycotoxins, especially aflatoxin and ochratoxin.
