冷冻冷藏食品小肠结肠炎耶尔森菌病原学检测

【摘要】：目的调查安徽省六安市区冷冻冷藏食品中小肠结肠炎耶尔森菌污染状况。方法 2009—2014年,每年5—10月在六安市区几家大型商场、超市食品专柜分批采集冷冻冷藏食品标本共计523份,进行小肠结肠炎耶尔森菌病原学检测和分子生物学研究。结果不同冷冻冷藏食品中阳性检出率19.89%(104/523)。其中生食阳性检出率30.75%(99/322),熟食阳性检出率2.49%(5/201),差异有统计学意义(χ~2=62.03 P0.01);标本中以O:8型小肠结肠炎耶尔森菌菌株为主(34/104),6种生化反应模式,生物分型为1A型;4株致病性O:3型菌株均含有毒力基因ail、ystA、yadA、virF;脉冲场凝胶电泳(PFGE)分子分型鉴定O:3型致病性菌株均为K6GNIIC30021,与本地腹泻病人和宿主动物菌株均在同一聚类分支,为国内常见毒株型。结论小肠结肠炎耶尔森菌是本地冷冻冷藏食品主要污染源之一。
[Abstract]:Objective to investigate the contamination of Yersinia enterocolitica in frozen and refrigerated foods in Luan City, Anhui Province. Methods A total of 523 frozen and refrigerated food samples were collected from several shopping malls in Luan City from May to October in 2009-2014. The pathogens and molecular biology of Yersinia enterocolitica were detected. Results the positive rate of different frozen foods was 19.89% (104 / 523). The positive rate of raw food was 30.75% (99 / 322), and that of cooked food was 2.49% (5 / 201). The virulence gene of the virulence gene was found in all of the 4 strains of pathogenic O: 3 type 1A, and the pathogenicity strains of O: 3 type were identified as K6GNIIC30021 by pulsed field gel electrophoresis (PFGE), which were all in the same cluster branch with the local diarrhea patients and the host animal strains, and the results showed that all of them were in the same cluster branch as the local diarrhea patients and the host animal strains, and all of them were identified as K6GNIIC30021 by (PFGE) molecular typing. It is a common strain in China. Conclusion Yersinia enterocolitica is one of the main pollution sources of frozen and refrigerated food.
