江西省食品中沙门菌污染与耐药性调查

【摘要】:目的了解江西省食品中沙门菌污染状况及菌株耐药性,为监管部门制定政策措施提供依据。方法沙门菌检测参照GB 4789.4方法,采用微量肉汤稀释法进行药物敏感性试验和结果判读。结果 2014-2016年从4186份食品中检出沙门菌121株,其中检出率较高的为生禽肉(14.1%),生畜肉(13.3%)。血清学鉴定分属19个血清型,居前3位的依次为德尔卑(32.14%)、阿贡纳(18.75%)和肠炎沙门菌(12.50%),112株沙门菌对15种抗生素中的14种产生不同程度的耐药,对红霉素表现为全部耐药,对四环素(58.93%)和氨苄西林(51.78%)的耐药性也较高,生猪肉中分离的耐药沙门菌和多重耐药菌最多。结论生肉制品是食源性沙门菌污染的主要食品,即食类中式凉拌菜和熟肉制品沙门菌也存在一定的污染,应引起足够重视。食源性沙门菌呈高耐药和多重耐药的趋势,尤其是分离自猪肉中的沙门菌耐药情况更严重,应加强耐药菌监测,合理使用抗菌药物。
[Abstract]:Objective to understand the contamination and drug resistance of Salmonella in food in Jiangxi province, and to provide the basis for the supervision department to make the policy and measure. Methods according to GB 4789.4 method, microdilution of broth was used to test the drug sensitivity of Salmonella spp. and the results were interpreted. Results 121 strains of Salmonella were detected from 4186 food samples from 2014 to 2016. Among them, the positive rate of salmonella was 14.1% in poultry meat and 13.3% in raw meat. Serological identification belonged to 19 serotypes, the top 3 were Delbe (32.14%), Agona (18.75%) and Salmonella enteritis (12.50%). Of the 112 Salmonella strains, 14 were resistant to 14 of the 15 antibiotics, all of which were resistant to erythromycin, and to tetracycline (58.93%) and ampicillin (51.78%), respectively, and the resistance to tetracycline (58.93%) and ampicillin (51.78%) was also higher. The most resistant Salmonella and multidrug-resistant bacteria were isolated from raw pork. Conclusion Raw meat products are the main food contaminated by Salmonella, that is, salmonella in Chinese style and cooked meat products also have some contamination, which should be paid more attention to. Food-borne Salmonella showed the trend of high drug resistance and multi-drug resistance, especially the resistance of Salmonella isolated from pork was more serious. Therefore, the surveillance of drug-resistant bacteria should be strengthened, and the rational use of antibiotics should be strengthened.
