陕西省市售食品中铝含量调查与健康风险评估

【摘要】:目的了解陕西省市售食品中铝污染状况,评估陕西省居民膳食铝摄入水平及其潜在的健康风险。方法在陕西省10个地市随机采集食品1 311份,按照食品中铝测定的标准操作程序进行检测,结合陕西省居民各类食物消费量数据,采用化学非致癌物的健康风险评价模型,对陕西省居民膳食铝暴露量及存在的健康风险进行评估。结果薯类及其制品、水产及其制品和谷类及其制品中铝平均含量较高,油炸食品中铝超标率最高。陕西居民每日每公斤体重铝平均摄入量为0.477 1mg/kg,占每日耐受摄入量(TDI)的167%,贡献率前三的食品分别是谷类及其制品、薯类及制品和水产及其制品。采用化学非致癌物的健康风险评价模型,所得不同水平的铝摄入个人年风险值均大于国际相关机构推荐的化学污染物最大可接受风险水平(1.0×10~(-6)/a)。结论陕西居民膳食铝摄入存在一定的健康风险,谷类及其制品、薯类及制品和水产及其制品是摄入的主要来源,应当及时采取适当的风险管理措施。
[Abstract]:Objective To study the status of aluminum pollution in the commercial food in Shaanxi province and to evaluate the dietary aluminum intake and its potential health risk in Shaanxi Province. Methods A total of 1,311 food samples were randomly collected in 10 local cities of Shaanxi, and tested according to the standard operating procedures of aluminum determination in food, and combined with the data of all kinds of food consumption of the residents in Shaanxi, and the health risk evaluation model of chemical non-carcinogen was adopted. The exposure and health risk of dietary aluminum in the residents of Shaanxi Province were evaluated. Results The average content of aluminum in potato and its products, aquatic products and its products and grains and its products was high, and the content of aluminum in the fried food was the highest. The average daily consumption of aluminum in Shaanxi residents was 0.4777 1 mg/ kg, accounting for 167% of the daily tolerance intake (TDI), and the first three food products were cereals and its products, potatoes and products, and aquatic products and their products. The health risk assessment model of chemical non-carcinogen is used, and the annual risk value of aluminum in different levels is greater than the maximum acceptable risk level (1.0-10 ~ (-6)/ a) of the chemical pollutants recommended by relevant international agencies. Conclusion The dietary aluminum of Shaanxi residents has a certain health risk, and the grain and its products, potatoes and products and its products are the main sources of the intake, and appropriate risk management measures should be taken in time.
