异麦芽酮糖饮料的血糖指数测定

【摘要】:目的:异麦芽酮糖在运动饮料的开发研制方面具有广阔的前景,可依据异麦芽酮糖低血糖指数(GI)的特性,与其它糖类配比,研制不同GI的运动饮料,特别是较低GI的运动饮料。由于异麦芽酮糖原料的来源不同,其GI值可能存在一定的差异。因此,需要对拟作为运动饮料原料的异麦芽酮糖的GI值进行测定。本研究拟比较不同血糖仪对异麦芽酮糖饮料GI值测定的影响,以及不同含糖量和不同体积的异麦芽酮糖饮料对GI值的影响。 方法:选取10名健康成年女性受试者志愿,按照《食物GI测定国际标准》(ISO26642:2010)进行测试。采集指尖血,分别采用YSI-1500血糖仪和罗氏卓越血糖仪,测定口服50g-250ml(20g/100ml)、50g-500ml(10g/100ml)、25g-250ml(10g/100ml)和25g-500ml(5g/100ml)的异麦芽酮糖饮料的GI值。 结果:共采集718个血样(包括预实验),YSI血糖仪测定50g-250ml,50g-500ml,,25g-250ml和25g-500ml四种不同CHO、不同体积(浓度)条件下,异麦芽酮糖的GI值分别为32.18±3.74,31.00±3.55,37.40±7.18,36.76±6.08;罗氏血糖仪测定50g-250ml,50g-500ml,25g-250ml和25g-500ml四种不同CHO、不同体积(浓度)条件下,异麦芽酮糖的GI值分别为33.75±5.00,29.50±3.52,46.30±10.81,37.50±5.50。 结论:(1)按照ISO26642:2010要求,50g-250ml浓度条件下,两种血糖仪均适用于异麦芽酮糖的GI值的测定。(2)50g-250ml浓度条件下,测得的异麦芽酮糖的GI值更准确。25g-500ml浓度条件下,测得的异麦芽酮糖的GI值和国际标准浓度比较并无明显差异。25g-250ml浓度条件下,测得的异麦芽酮糖的GI值和这两种浓度比较起来有显著性差异。
[Abstract]:Objective: isomaltose has a broad prospect in the development of sports drinks. According to the characteristics of isomaltose hypoglycemia index (GI) and the ratio of other sugars, different GI sports drinks, especially sports drinks with lower GI, can be developed. Due to the different sources of isomaltosugar, there may be some differences in GI value. Therefore, the GI value of isomaltoose to be used as raw material for sports beverage needs to be determined. The purpose of this study was to compare the effects of different blood sugar instruments on the determination of GI value of isomaltose drinks and the effects of different sugar contents and volumes of isomaltose drinks on GI values. Methods: ten healthy adult female volunteers were selected and tested according to the International Standard for the determination of Food GI (ISO 26642: 2010). The blood samples from fingertips were collected, and the GI values of isomaltoketoose drinks with 50g-250ml (20g/100ml) 50g-500ml (10g/100ml) 25g-250ml (10g/100ml) and 25g-500ml (5g/100ml) were determined by YSI-1500 and Roche's superior glycometer, respectively. Results: a total of 718 blood samples (including pre-test) were collected. The GI values of isomaltose were 32.18 卤3.74 卤3.537.00 卤3.537.40 卤7.187.40 卤36.76 卤6.08 under different volume (concentration) conditions. The GI value of isomaltose was 33.75 卤5.00 卤29.50 卤3.52 卤46.30 卤10.81 卤37.50 卤5.50 under the different volume (concentration) conditions of 50g-250ml, 50g-500ml, 25g-250ml and 25g-500ml, respectively. Conclusion: (1) according to the requirement of ISO 26642: 2010, the two kinds of blood saccharometers are suitable for the determination of GI value of isomaltocarbohydrate. (2) under the condition of 50g-250ml concentration, the GI value of isomaltocarbohydrate is more accurate at the concentration of .25g-500ml. There was no significant difference between the GI value of the measured isomaltosugar and the international standard concentration. At the concentration of 25g-250ml, the GI value of the measured isomaltocarbohydrate was significantly different from that of the two concentrations.
