【摘要】：食品质量安全是我国当前亟需解决的民生问题。食品供应链由于受食品本身及生产特性的影响,其管理有别于一般行业和产品供应链,在质量安全风险生成及控制等方面需要深入研究。在回顾了国内外对于食品供应链、食品质量安全和食品质量安全风险的相关研究基础上,本文研究了供应链背景下食品质量安全风险的生成机理及食品质量安全风险的控制两方面问题。首先,运用文献分析法,对供应链背景下食品质量安全风险的影响因素进行识别并按其重要性进行排序。并利用解释结构模型(ISM),提出供应链背景下食品质量安全风险影响因素的结构关系模型。进一步提出食品供应链上质量安全风险的生成机理。其次,在生成机理及食品所属特性的基础之上,将对供应链上食品质量安全风险的控制分为供应链环节的食品质量安全风险控制和供应链上相关主体的食品质量安全风险控制。供应链环节的食品质量安全风险控制部分主要依据前文中引发风险的关键影响因素进行分析,构建了厂商与消费者参与的动态博弈模型;供应链上相关主体的食品质量安全风险的控制部分,文章运用博弈分析法对相关主体在动态博弈模型中的行为进行分析,提出加强监管力度、降低监管成本、强化企业社会责任与自律及增强媒体舆论作用等建议措施。基于本文的食品质量安全风险的生成机理及食品质量安全风险的建模分析,为食品安全控制提供了理论依据和措施建议,是解决食品安全问题的有益尝试。
[Abstract]:Food safety is the people's livelihood problem in China. The food supply chain is affected by the food itself and the production characteristics, its management is different from the general industry and product supply chain, need further research in terms of quality and safety risk generation and control. In the review at home and abroad for the food supply chain, based on related research the quality of food safety and food quality and safety risk, this paper studies the control risk formation mechanism of food quality safety risk in the context of supply chain and food safety problems from two aspects. Firstly, using literature analysis method, the influence factors of food quality and safety risk of supply chain under the background of the identified and sorted according to their importance. And by using interpretative structural model (ISM), supply chain is proposed under the background of food quality and safety risk factors influence the structure relationship model. Put forward the food supply chain The formation mechanism on the quality and safety risk. Secondly, on the basis of the characteristics and the mechanism of formation of food, food quality and safety risk control of supply chain of food quality and safety risk is divided into supply chain of food quality and safety risk control and supply chain related subject. Food quality and safety risk control of supply key chain effect caused by risk factors in part on the basis of the above analysis, construct the dynamic game model of firms and consumers involved in the control of food quality and safety; supply chain risk related subjects, the behavior of related subjects in the dynamic game model is analyzed by using game analysis method, put forward to strengthen supervision reduce the cost of supervision, strengthening corporate social responsibility and self-discipline and strengthen the media role measures. The food quality and safety based on the wind Risk generation mechanism and modeling and analysis of food quality and safety risk provide theoretical basis and measures for food safety control, which is a useful attempt to solve food safety problems.
