X公司后勤餐饮供应链分析与改进对策研究

【摘要】:随着餐饮行业的蒸蒸日上,越来越多的国内企业开展了餐饮业务,因为餐饮本身具有菜品种类众多、重口难调的特点,同时对于产品的质量安全还需要严格控制,市场同质化严重,行业内竞争激烈,所以在这种情况下,如何节约成本、提高服务水平、扩展客户是众多餐饮行业亟需面对的问题。为了解决这些问题,越来越多的企业根据需要配送的地区距离远近,计划建设了加工中心,即把原先各自为政的连锁分店串联起来,统一服从总部的调遣,完成了分散式供应链模式向集中式供应链模式的改变。但是采取集中式供应链模式并不是盲目的,必须要有一定条件才能达成,因此本文以X公司的后勤餐饮为例,研究在X公司的需求状况下,采用集中式供应链模式,对现有的分散式供应链模式是否可以作为改进。本文的案例企业X公司是一家大型企业,为了更好的建设一流企业,提高企业竞争力,保证其职能业务正常开展,现阶段正准备对公司后勤进行改进,而后勤餐饮是其中重要的一环,虽然公司后勤餐饮和追求利润的餐饮行业有些不同,在公司里属于成本单位,但是同样都是为人们提供食品,在食品制作提供服务上是一样的。笔者调研其后勤餐饮部,对他们的后勤餐饮供应现状、供应流程做了详细调查,并以此为例,建立供应链绩效评价指标,对该公司后勤餐饮现有情况进行评价,对X公司现阶段后勤餐饮的应急能力、响应能力、信息化水平的不足之处进行了整理,并根据其现有的运营模式,对该公司餐饮后勤现有的供应链运营成本做了一个大概的测算。通过供应链理论,对其后勤餐饮供应链从流程方面进行改进,完成提高生产效率、提高服务水平、提升质量安全水平等目标,可以让福利公司员工,在餐饮服务提供方面有更多选择,节约供应链成本,提高员工对企业的归属感,增强企业竞争力,为其建设一流企业添砖加瓦。在研究过程中,笔者为了验证供应链流程改进的可操作性,对几十家已采用此模式的企业做了相关调研,可以发现将分散式供应链模式改进成集中式供应链模式是很多拥有一定客户的餐饮企业的趋势。
[Abstract]:With the development of the catering industry, more and more domestic enterprises have developed catering business, because the food and beverage itself has the characteristics of numerous kinds of dishes and difficult to adjust its heavy mouth. At the same time, the quality and safety of the products also need to be strictly controlled. The market homogenization is serious, the competition in the industry is fierce, so in this case, how to economize the cost, improve the service level, expand the customer is the problem that the numerous catering industry urgently needs to face, in order to solve these problems, More and more enterprises are planning to build processing centers according to the distance between the regions where they need to be distributed, that is, to link up the chain stores that were previously run by themselves, and to unify their services from the headquarters. The change of decentralized supply chain model to centralized supply chain mode has been completed, but the centralized supply chain mode is not blind and must have certain conditions to achieve it. Therefore, this paper takes the logistics catering of X Company as an example. This paper studies whether the existing decentralized supply chain mode can be improved by using centralized supply chain mode under the demand of X Company. The case of this paper is that X Company is a large enterprise, in order to build a better first-class enterprise, To improve the competitiveness of enterprises and ensure the normal development of their functional operations. At this stage, they are preparing to improve the company's logistics, and logistics catering is an important part of it, although there are some differences between the company's logistics catering industry and its profit-seeking catering industry. It is a cost unit in the company, but it is also for people to provide food, and it is the same in food making and providing services. The author investigated its logistics and catering department, and made a detailed investigation on their logistics and catering supply status and supply process. Taking this as an example, this paper establishes the performance evaluation index of supply chain, evaluates the existing situation of logistics catering in this company, and collates the deficiency of emergency ability, response ability and information level of logistics catering in X Company at the present stage. According to its existing operation mode, this paper makes a general calculation of the current supply chain operation cost of catering logistics of the company. Through the supply chain theory, it improves its logistics catering supply chain from the aspect of process, and completes the improvement of production efficiency. To improve the service level and improve the quality and safety level can make the employees of welfare companies have more choices in the provision of catering services, save the cost of the supply chain, enhance the sense of belonging of the employees to the enterprises, and enhance the competitiveness of the enterprises. In order to verify the maneuverability of supply chain process improvement, the author has done some research on dozens of enterprises that have adopted this model. It can be found that it is the trend of many catering enterprises with certain customers to improve the decentralized supply chain model into the centralized supply chain model.
