基于供应链质量管理的超市食品安全控制研究

【摘要】:改革开放以来,中国经济发展突飞猛进,人们的生活水平和质量稳步提高,百姓对食品质量的要求也随着生活质量的提高而提高。民以食为天,食以安为先。随着近年来有毒、有害食品事件的不断曝光,也提起了人们对食品安全的注意。食品安全的保障不仅关系到百姓的健康,也关系到社会的稳定和国家的长治久安。因此,笔者基于以上认识,以食品安全为选题,正是基于对食品安全的关注和重视,想要借助自身所学知识为食品安全的控制献上绵薄之力。 根据食品本身所具有的特殊性,超市食品安全管理不同于一般食品市场安全管理,具有特殊性。笔者从超市本身的特殊性出发,根据供应链质量管理的优越性和当前中国食品供应链发展的现状进行论述,通过实例分析和比较研究,针对中国当前超市食品安全管理的整体状况,作出一些理论论证。基于此,笔者主要从以下几个方面展开。 在导论部分,是对本文研究所做的一个简明阐述,主要内容有课题研究的背景、目的和意义,,并对研究的依据进行梳理,以便在研究调研工作中找到合适的理论依据和现实依据。笔者还就与此文有关的国内外著名学者的研究成果做简要介绍,从而找到理论研究的灵感。此外,本文研究的主要内容、研究方法和文章的创新点也在本章中一一呈现。在第二部分,首先阐明什么是食品供应链、什么是食品供应链质量管理,食品供应链质量管理的主要内容以及特点都有哪些。在做好基本前提理论之后,接着对当前中国超市食品安全及其主要问题做简要阐述,通过分析中国超市食品安全中的隐患因素,探索供应链质量管理与超市食品安全之间所存在的直接而又复杂的关系。在第三部分,笔者根据中国主要的食品安全监管机制,从主要监管模式出发,研究当前超市食品安全监管中存在的问题,通过与发达国家之间的比较分析,找到中国在超市食品安全监管方面与发达国家之间的差距,从而为改善中国的超市食品安全监管体制机制做出贡献。在第四部分,笔者就如何完善中国超市食品安全监管提供一些对策,主要从供应链的每个环节入手,主要有完善超市食品安全标准,制定食品的市场准入制度;建立高效的物流配货系统,加大对食品流通环节的管理;帮助超市建立自我监管机制,建立内外结合的监管机制等方面对超市食品安全管理和控制提供自己的看法。 随着中国社会经济的发展,超市逐渐遍布于城市的每一个角落,并且正在逐步向农村扩张,成为城市和农村食品销售的主要阵地,可以说超市食品安全不仅直接关系着消费者的生命健康权益,还关系着整个社会的稳定和国家的长治久安。笔者通过分析论证,希望超市食品安全管理能够得到更多人的关注,从而为建立更加健全的超市食品监管机制而努力。
[Abstract]:Since the reform and opening up, China's economy has developed by leaps and bounds, people's living standards and quality have steadily improved, and the people's demand for food quality has also increased with the improvement of the quality of life. The exposure of harmful food incidents has also brought up people's attention to food safety. The protection of food safety is not only related to the health of the people, but also to the stability of society and the long-term stability of the country. Therefore, the author based on the above understanding, Taking food safety as the topic, it is based on the concern and attention to food safety, and wants to contribute to the control of food safety with the help of its own knowledge. According to the particularity of food itself, supermarket food safety management is different from general food market safety management. According to the superiority of supply chain quality management and the current situation of food supply chain development in China, through the case analysis and comparative study, the paper aims at the overall situation of food safety management in supermarkets in China. To make some theoretical arguments. Based on this, the author mainly from the following aspects. In the introduction part, it is a brief exposition of the research in this paper. The main contents include the background, purpose and significance of the research, and the basis of the research. In order to find the appropriate theoretical basis and practical basis in the research work, the author also briefly introduces the research results of famous scholars at home and abroad, so as to find the inspiration for theoretical research. The main contents, research methods and innovative points of this paper are also presented in this chapter. In the second part, we first clarify what is food supply chain, what is food supply chain quality management, What are the main contents and characteristics of food supply chain quality management? after doing a good job of the basic premise theory, then briefly expound the current food safety of Chinese supermarkets and its main problems. By analyzing the hidden trouble factors in Chinese supermarket food safety, the direct and complex relationship between supply chain quality management and supermarket food safety is explored. In the third part, according to the main food safety supervision mechanism in China, From the view of the main supervision mode, this paper studies the existing problems in supermarket food safety supervision, and finds out the gap between China and developed countries in supermarket food safety supervision through the comparative analysis between China and developed countries. In part 4th, the author provides some countermeasures on how to improve the supervision of food safety in supermarkets in China, starting with every link in the supply chain. They mainly include perfecting food safety standards in supermarkets, formulating food market access systems; establishing efficient logistics and distribution systems to increase the management of food circulation links; and helping supermarkets establish a self-regulatory mechanism. To establish internal and external regulatory mechanism and other aspects of supermarket food safety management and control to provide their own views. With the development of China's social economy, supermarkets are gradually spreading in every corner of the city, and are gradually expanding into rural areas, becoming the main position of food sales in urban and rural areas. It can be said that supermarket food safety is not only directly related to the life and health rights of consumers, but also to the stability of the whole society and the long-term stability of the country. Through analysis and argumentation, the author hopes that the supermarket food safety management can get more people's attention. In order to establish a more sound supermarket food regulatory mechanism and efforts.
