乳制品供应链的溯源体系与预警模型研究

【摘要】:近年来我国乳制品质量安全事故频发,不仅危害了消费者的身体健康,还严重影响了国内乳制品的市场销售,给企业和国家造成了巨大的经济损失。为了促进乳制品行业的健康发展、挽回顾客的消费信心,必须加强乳制品供应链的安全风险控制,保证乳制品的生产安全和产品质量。 根据研究食品安全“从农田(牧场)到餐桌”的整体管理理念、风险分析、透明性原则等,建立和发展食品安全溯源体系和预警管理,既是提高我国食品安全与风险管理水平的要求,也是全球食品安全管理的发展趋势。因此,本文以供应链为视角,以乳制品为研究对象,在深入分析乳制品供应链总体业务流程的基础上,建立基于信息采集、信息记录、信息传递、信息管理与信息查询的溯源平台,同时实现供应链溯源查询与安全风险预警管理的功能,最终形成“事前预警、事中控制、事后召回”的全方位安全管理模式。 在本文中,首先对乳制品供应链各个业务环节进行详细分析,并通过对业务流程进行Petri网建模,建立了乳制品供应链的关键溯源信息流链路;分析了供应链上采用的数据信息采集技术与编码方案,对各业务环节的信息采集和数据关联过程进行了阐述,并以关键溯源信息流链路为基础逐步形成完整的供应链溯源信息网络;通过对比分析现有溯源模式的优缺点,提出了适合乳制品供应链的混合式溯源模式以及横向与纵向结合的两阶段查询方式;然后以供应链信息采集和数据分析应用为目的,立足消费者、企业和政府监管部门对溯源信息的查询需求,建立溯源平台。 基于溯源平台建立的供应链数据信息的采集与应用基础,本文设计并实现了以预警模型为核心的乳制品供应链安全风险预警管理功能。在该部分内容上,本文首先明确了乳制品供应链安全风险预警体系的结构和运作流程,并分析了监控预警与溯源的综合应用关系;然后,基于乳制品行业内的DHI报告以及HACCP管理规范,结合以重要性为主的指标选取原则,建立乳制品供应链安全风险预警指标体系;随后,以指标体系为依据,建立基于BP神经网络的预警模型,,并给出预警算例;最后,基于案例推理(CBR)理论分析了预警知识库的设计过程及其设计内容。
[Abstract]:In recent years, the frequent accidents of dairy products quality and safety in our country not only endanger the health of consumers, but also seriously affect the market sales of domestic dairy products. In order to promote the healthy development of dairy industry and restore consumer confidence, it is necessary to strengthen the safety risk control of dairy supply chain and ensure the production safety and product quality of dairy products. According to the overall management concept, risk analysis and transparency principle of food safety "from farmland (pasture) to dining table", the establishment and development of traceability system and early warning management of food safety, It is not only the requirement of improving the level of food safety and risk management in China, but also the development trend of global food safety management. Based on in-depth analysis of the overall business process of dairy supply chain, a traceability platform based on information collection, information recording, information transmission, information management and information query is established. At the same time, the function of traceability inquiry and early warning management of safety risk in supply chain is realized, and the omni-directional safety management mode of "forewarning beforehand, controlling in the event, recalling afterwards" is formed. In this paper, every business link of dairy supply chain is analyzed in detail, and the key traceability information flow link of dairy product supply chain is established by modeling business process with Petri net. This paper analyzes the data information collection technology and coding scheme used in the supply chain, and expounds the process of information collection and data association in various business links. Based on the key traceability information flow link, a complete supply chain traceability information network is gradually formed, and the advantages and disadvantages of the existing traceability modes are compared and analyzed. The mixed traceability mode suitable for dairy supply chain and the two stage query mode of horizontal and vertical combination are put forward, and the purpose of the information collection and data analysis of supply chain is to base on consumers. Enterprises and government regulatory authorities for traceability information query needs, the establishment of traceability platform. Based on the collection and application of supply chain data information based on traceability platform, this paper designs and implements the early-warning management function of dairy supply chain security risk based on early-warning model. This paper firstly clarifies the structure and operation process of dairy supply chain security risk warning system, and analyzes the comprehensive application relationship between monitoring, warning and traceability, and then, based on the DHI report and HACCP management specification in dairy industry, Combining with the principle of selecting the important indexes, the paper establishes the early warning index system of dairy supply chain security risk. Then, based on the index system, the early warning model based on BP neural network is established, and an example of early warning is given. Finally, Based on CBR (case based reasoning) theory, the design process and content of early warning knowledge base are analyzed.
