【摘要】:蔬菜是日常生活中最常见的食品之一,保证蔬菜质量安全是农产品供应中必须面对的问题。在蔬菜的生产及供应过程中,记录蔬菜供应链各个环节的关键信息,建立蔬菜质量安全可追溯体系,是保证蔬菜质量安全的有效方式。 作为中国东北的一个农业大省,吉林省受气候和地理位置的影响,冬天蔬菜的供应一直依靠外来输入为主,要改变这一状况,就必须加快推进棚膜蔬菜产业的发展。棚膜蔬菜的生产可以克服气候的不利影响,就近的为消费者提供新鲜的蔬菜。对于蔬菜供应来说,仅保证蔬菜充足和新鲜的供应是不够的,还必须保证蔬菜质量的安全。蔬菜质量安全追溯系统可以记录蔬菜生产、加工、运输和销售过程中的一些信息,消费者和监管部门可以方便的查询各项信息,,可以使消费者明明白白消费,也方便了监管部门的管理。 建立吉林省蔬菜质量安全追溯体系,首要的问题是明确需要记录那些关键信息。根据与蔬菜供应链相关的法律法规和国家标准,对蔬菜供应链中可能需要记录的指标进行了提取,而这些指标有些对追溯系统来说作用是不大的,所以使用层次分析法对各项指标进行了筛选,确定了吉林省蔬菜质量安全追溯体系最后需要记录的关键指标。吉林省蔬菜质量安全追溯体系的关键指标与蔬菜生产和流通的各个环节相对应,其中一级关键指标为:产地环境、生产农资、生产过程、加工过程、运输过程、贮藏过程和销售过程,每个一级指标之下又包含若干二级关键指标。 根据信息记录关键指标的筛选结果,对吉林省棚膜蔬菜质量安全追溯系统进行了整体的设计。首先对追溯系统所使用的追溯标签和追溯码进行了设计,追溯标签的设计的目标是信息简单、明确的展现给消费者,为此在设计中使用了二维码技术,消费者使用移动设备可以方便的获取信息。为了保证追溯码的安全,使其在使用过程中不被盗用,设计了内部追溯码和外部追溯码结合的方式,其中内部追溯码只供系统内部使用,外部追溯码是消费者查询所使用的编码,是使用加密的方法生成的,可以保证包装上的编码不被穷举盗用。结合调研和研究情况,对吉林省棚膜蔬菜质量安全追溯系统的功能进行了设计,将整个系统分为信息采集模块、信息处理模块、信息查询模块和管理模块,对上述模块需要实现的功能进行了描述。 为了保证吉林省棚膜蔬菜质量安全追溯系统的实施,对与蔬菜质量安全追溯的制度建设进行了研究,分析了制度建设的必要性,重点对蔬菜生产加工企业的制度建设进行了研究,分析了一些蔬菜生产加工企业为融入吉林省棚膜蔬菜质量安全追溯系统进行制度建设的要点。本文对吉林省棚膜蔬菜质量安全追溯系统的设计具有较强的现实意义。
[Abstract]:Vegetable is one of the most common food in daily life. To ensure the quality and safety of vegetable is a problem that must be faced in the supply of agricultural products. In the process of vegetable production and supply, the key information of every link of vegetable supply chain is recorded. Establishing traceability system of vegetable quality and safety is an effective way to ensure vegetable quality and safety. As a large agricultural province in northeast China, Jilin Province is affected by climate and geographical location. In winter, the supply of vegetables has been mainly dependent on foreign inputs. We must change this situation. It is necessary to speed up the development of the greenhouse vegetable industry. The production of greenhouse vegetables can overcome the adverse effects of the climate and provide fresh vegetables to consumers nearby. For vegetable supply, It is not enough to ensure an adequate and fresh supply of vegetables. It is also necessary to ensure the safety of vegetable quality. The vegetable quality safety traceability system can record some information during the production, processing, transportation and sale of vegetables. Consumers and regulators can easily query all kinds of information, can make consumers clear consumption, but also convenient regulatory management. The most important thing in establishing the vegetable quality and safety traceability system in Jilin Province is to clearly record the key information. According to the laws, regulations and national standards related to the vegetable supply chain, The indicators that may need to be recorded in the vegetable supply chain are extracted, and some of these indicators are of little use to the traceability system, so AHP is used to screen the indicators. The key indexes of Jilin Province vegetable quality and safety traceability system are determined. The key indexes of Jilin Province vegetable quality and safety traceability system correspond to each link of vegetable production and circulation. The primary key indicators are: production environment, agricultural production, production process, processing process, transportation process, storage process and sales process. According to the screening results of key indexes of information recording, the quality and safety traceability system of greenhouse film vegetables in Jilin Province was designed. Firstly, the traceability labels and traceability codes used in the traceability system were designed. The goal of the traceback label design is to show the information to the consumer simply and clearly. For this reason, the two-dimension code technology is used in the design, and the consumer can easily obtain the information by using mobile device, in order to ensure the safety of the traceback code, So that it is not misused in the process of use, a combination of internal traceability code and external traceability code is designed, in which the internal traceback code is only used for internal use of the system, and the external traceback code is the code used by the consumer to query. It is generated by using the method of encryption, which can ensure that the code on the package will not be stolen. According to the investigation and research situation, the function of the plastic film vegetable quality and safety traceability system in Jilin Province has been designed. The whole system is divided into information collection module, information processing module, information query module and management module. In order to ensure the implementation of greenhouse film vegetable quality and safety traceability system in Jilin Province, the system construction of vegetable quality and safety traceability was studied, and the necessity of system construction was analyzed. The emphasis is on the system construction of vegetable production and processing enterprises. This paper analyzes the key points of some vegetable production and processing enterprises in order to integrate the greenhouse film vegetable quality and safety traceability system into Jilin Province. This paper has a strong practical significance for the design of the greenhouse film vegetable quality and safety traceability system in Jilin Province.
