企业餐饮供应系统分析与模式研究

【摘要】:企业餐饮供应系统负责企业所有员工的餐饮供应服务和保障工作,是企业后勤系统的一个重要组成部分,它的有效运作关系到企业的经营与发展,因此,本篇文章企业餐饮本篇文章围绕企业餐饮供应系统,研究了两个问题:1)企业餐饮供应系统在企业系统的地位与作用问题;2)企业餐饮供应系统运作模式现状与模式选择的具体条件问题。本文以供应链管理、后勤管理、运营管理等理论为基础,应用系统分析、定量比较分析、数学建模等研究方法,围绕企业餐饮供应系统,主要工作内容以及成果如下:首先,通过企业系统、企业后勤系统和餐饮供应系统的分析,证明企业餐饮供应系统在企业系统中具有重要的地位与作用,即企业餐饮供应系统是企业系统中的关键要素,对企业系统正常和有效地运行具有保障作用,对企业未来发展具有保障和促进作用。其次,从系统要素、构成结构以及运行流程三个方面对企业餐饮供应系统两种运作模式进行了介绍和比较分析,得到了两点结论,第一,在系统复杂程度方面,第二种运作模式比第一种运作模式复杂。第二,在食材运输调配的复杂程度、企业生产加工效率、企业生产加工成本、菜品供应速度、企业对供应商合作关系管理复杂程度以及企业人力物力资源节约方面,第二种运作模式比第一种运作模式具有优势。最后,基于两种运作模式的系统参与主体的目标成本建模和比较分析,得出不同主体基于目标成本进行模式选择决策过程与结果的影响因素为不同模式的采购与储存固定成本、每种食材的年库存持有成本、平均缺货数量、单位缺货成本、需求满足率等。
[Abstract]:The enterprise catering supply system is responsible for the catering service and guarantee work of all employees of the enterprise. It is an important part of the enterprise logistics system. Its effective operation is related to the management and development of the enterprise. This article revolves around the enterprise catering supply system, This paper studies two questions: (1) the status and function of enterprise catering supply system in enterprise system (2) the present situation of the operation mode of enterprise catering supply system and the specific conditions of mode selection. Based on the theories of supply chain management, logistics management and operation management, this paper applies the research methods of system analysis, quantitative comparative analysis, mathematical modeling and so on. The main work contents and results are as follows: first of all, Through the analysis of enterprise system, enterprise logistics system and catering supply system, it is proved that the enterprise catering supply system plays an important role in the enterprise system, that is, the enterprise catering supply system is the key element in the enterprise system. It can guarantee the normal and effective operation of the enterprise system and promote the future development of the enterprise. Secondly, from three aspects of system elements, structure and operation process, this paper introduces and compares the two operation modes of enterprise catering supply system, and draws two conclusions: first, in terms of the complexity of the system, The second mode of operation is more complex than the first. Second, in terms of the complexity of the transportation and deployment of food materials, the production and processing efficiency of enterprises, the production and processing costs of enterprises, the speed of food supply, the complexity of the management of cooperative relations between enterprises and suppliers, and the saving of human and material resources of enterprises, The second mode of operation has advantages over the first mode of operation. Finally, the target cost modeling and comparative analysis of the system participants based on the two operation modes show that the factors influencing the decision-making process and the results of the mode selection based on the target cost are the fixed cost of purchase and storage in different modes. Annual inventory holding cost, average shortage quantity, unit stock cost, demand satisfaction rate, etc.
