基于产业链的旅游食品安全问题与对策研究

【摘要】：旅游食品安全是旅游业可持续发展的重要基础,文章从旅游食品产业链入手,分析旅游食品产业链具有的复杂性、生化性、滞后性特征,认为旅游食品产业链与旅游食品安全高度关联;针对中国旅游食品产业链存在的诸如发展不平衡、信息不对称、利益分配不均衡、规模化程度不高等问题,提出了形成旅游食品产业链利益共享机制、推进旅游食品全行业HACCP监控体系、打造旅游食品产业链内部追溯体系、提高产业链中生产经营者违法成本、建立全方位旅游食品安全监管体系等对策建议。
[Abstract]:Tourism food safety is an important basis for the sustainable development of tourism. This paper analyzes the complexity, biochemistry and lag characteristics of tourism food industry chain from the perspective of tourism food industry chain. It is considered that tourism food industry chain is highly related to tourism food safety, and that there are some problems in China's tourism food industry chain, such as unbalanced development, asymmetric information, unbalanced distribution of benefits, low scale of scale and so on. The paper puts forward the mechanism of benefit sharing in tourism food industry chain, the promotion of HACCP monitoring system of tourism food industry, the establishment of internal tracing system of tourism food industry chain, and the increase of illegal cost of producers and operators in industry chain. To establish a comprehensive tourism food safety regulatory system and other countermeasures.
