食品保藏技术课程教学方法改革探析

【摘要】：针对食品保藏技术知识点多、实用性强的特点,笔者通过近几年的教学实践,重构食品保藏技术课程的内容,改革理论和实践教学内容过程,改革传统的讲授式教学方法,针对不同的教学内容,充分发掘适合学生学习方式的教学方法.灵活运用讲授法和启发式、案例式、互动式、项目式、研讨式等多种新型教学方法,激发学生学习兴趣,锻炼学生实践操作技能,做到"教学做"一体化,提高课程教学质量,培养高素质技能型专门人才.
[Abstract]:In view of the characteristics that food preservation technology has many knowledge points and strong practicability, through teaching practice in recent years, the author reconstructs the content of food preservation technology course, reforms the process of theoretical and practical teaching content, and reforms the traditional teaching method of teaching. Aiming at different teaching contents, we should fully explore the teaching methods suitable for students' learning style. Flexible use of teaching method and heuristic, case, interactive, project, discussion and other new teaching methods, stimulate students' interest in learning, exercise students' practical operation skills, achieve the integration of "teaching and doing", and improve the quality of course teaching. Cultivate high-quality skilled professionals.
