欧美连锁酒店餐饮食品安全管理及给中国的启示

【摘要】:在对欧美连锁酒店餐饮食品安全管理的特点进行介绍的基础上,以纽约市中心希尔顿酒店作为典型案例进一步说明欧美连锁酒店餐饮食品安全管理的先进经验。提出对中国连锁酒店进一步开展餐饮食品安全管理工作的启示:一是从法律法规层面完善餐饮业食品安全标准体系;二是促进连锁酒店加强对食品原材料采购的管理;三是建立和推广连锁酒店标准化食品安全管理模式;四是强化连锁酒店和监管部门的食品安全信息化管理水平;五是在连锁酒店内部推广和实施HACCP体系。
[Abstract]:Based on the introduction of the characteristics of food safety management in European and American chain hotels, the advanced experience of food safety management in European and American chain hotels is further illustrated by taking New York Hilton Midtown as a typical case. This paper puts forward the enlightenment to the further development of food safety management of Chinese chain hotels: first, to perfect the food safety standard system of catering industry from the level of laws and regulations; second, to promote the chain hotels to strengthen the management of food raw materials procurement; The third is to establish and popularize the standardized food safety management model of chain hotels; the fourth is to strengthen the food safety information management level of chain hotels and regulators; and the fifth is to promote and implement HACCP system within chain hotels.
