赤峰硕丰畜禽食品有限公司食品冷链物流绩效评价研究

【摘要】:随着我国人民生活水平的日益提高,食品类别越来越丰富,人们对食品质量的要求越来越高,也因此带动了冷链物流业的长足发展,虽然我国冷链物流市场需求巨大,但从我国实际来看,每年腐烂、变质的食品数量多达数亿吨,成为食品冷链物流中的发展瓶颈,因此,保证食品质量安全,,防止食品变质,降低食品腐烂率,关乎民生,关乎人民福祉。 赤峰硕丰畜禽食品有限公司是赤峰市翁牛特旗乌丹镇的食品加工企业,曾成功打造了“蒙川”、“草原万顺”有机畜产品品牌,是一个具有现代化生产能力的肉食品厂,集加工、配送于一体,虽然每年的利润相当可观,但也存在一系列的问题,如没有专门用于冷链运输的车辆,配送成本较低,运输效率不高,货损率较高等。另外,配送过程中信息不通畅,各个环节信息闭塞,配送响应时间较长,导致缺损率大大增加,无形中增大了配送成本。 本文首先对冷链物流相关理论进行综述,介绍了国内外食品冷链物流的发展现状,介绍了冷链及食品冷链相关概念、特性、流程及条件,分析了农产品、冷冻食品、连锁超市和冷饮行业对食品冷链的需求,介绍了影响我国发展食品冷链物流业的制约因素,介绍了食品冷链物流业绩效评价体系的构建原则,从4个方面构建食品冷链物流绩效评价模型,并以赤峰硕丰畜禽食品有限公司为例,分析了该企业目前的食品冷链物流现状,运用模糊综合评判法进行绩效评价,并分析绩效评价结果,最后针对该企业,提出改善当前食品冷链状态的措施。
[Abstract]:With the improvement of people's living standard in our country, the food category is more and more abundant, and people's demand for food quality is becoming higher and higher, which has led to the rapid development of cold chain logistics industry, although the demand of cold chain logistics market in our country is huge. But according to the reality of our country, the number of rotten food is hundreds of millions of tons every year, which becomes the bottleneck in the development of food cold chain logistics. Therefore, to ensure food quality safety, to prevent food deterioration and to reduce food decay rate are vital to people's livelihood. The welfare of the people is at stake. Chifeng Shuofeng Livestock and Poultry Food Co., Ltd. is a food processing enterprise in Wuniute Banner of Chifeng City. It has successfully built "Mengchuan", "grassland Wanshun" organic animal product brand, and is a meat food factory with modern production capacity. Set processing, distribution in one, although the annual profit is considerable, but there are also a series of problems, such as there are no special cold-chain transport vehicles, distribution costs are low, transport efficiency is not high, high cargo loss rate, and so on. In addition, the information in the distribution process is not smooth, the information of each link is blocked, and the response time of distribution is longer, which leads to a great increase in the defect rate, which increases the distribution cost intangibly. This paper first summarizes the theory of cold chain logistics, introduces the development of food cold chain logistics at home and abroad, introduces the concept, characteristics, process and conditions of cold chain and food cold chain, analyzes agricultural products and frozen food. The demand for food cold chain in supermarket chain and cold drink industry is introduced. The restrictive factors affecting the development of food cold chain logistics industry in China are introduced. The construction principles of performance evaluation system for food cold chain logistics industry are introduced. The performance evaluation model of food cold chain logistics is constructed from four aspects. Taking Chifeng Shuofeng Livestock and Poultry Food Co., Ltd as an example, the present situation of food cold chain logistics in this enterprise is analyzed, and the fuzzy comprehensive evaluation method is used to evaluate the performance. The results of performance evaluation are analyzed. Finally, the measures to improve the status of food cold chain are put forward for the enterprise.
